    Here are 8 creative and unusual recipes with vegetables! From sweet potato brownies to cucumber cake.

    There are loads of creative ways to get your five-a-day or even 10-a-day! Being obsessed by vegetables, I love featuring them at every meal - from breakfast through to dessert. Adding extra vegetables to your diet brings textures, flavours and colours to your diet and I love experimenting with adding veg to meals where you wouldn't normally find them.

    Here are 8 crazy ways to get more vegetables into your diet - from cake to lemonade!

    Chocolate Mashed Potato Cake with Chocolate Icing and Tahini Drizzle Trust me on this one. The mashed potato gives bulk and moisture to the cake and the tahini drizzle is a lovely sesame flavour hit.

    Cucumber and Lemon Cupcakes with Pimm's Icing - The cucumber flavour is very delicate in this lemon sponge and I've topped it with a boozy Pimm's Cup icing.

    Crushed Minted Peas on Toast - I love avocado on toast, but you know those mornings when the avocado isn't quite perfect.... enter crushed peas on toast! The standby freezer staple makes a lovely, fresh-tasting green toast for breakfast or lunch.

    Whole Cauliflower and Sweet Potato Curry - Don't waste those lovely green cauliflower leaves, they're perfectly edible part of the vegetable. Here, I've stewed them into a fragrant curry that uses up the ENTIRE cauliflower!

    Coconut Oil Brownies with Maple-Roasted Sweet Potatoes - Sweet potatoes have been something of a trend in brownies, but instead of pureeing them, I've roasted them in maple syrup and coconut oil and added them as chunks of sweet orange loveliness.
