Grilled Herb Potatoes with a Trio of Dipping Sauces
These grilled herb potatoes are a great way to add bulk to a free-from barbecue rather than bread. They're full of flavour and get nice and crispy on the grill. Serves 6-8

  • 1kg potatoes (I used new potatoes)
  • 2 tablespoons olive oil
  • 1 handful of mixed fresh herbs, chopped (such as basil, parsley, rosemary, thyme etc...)
  • 1 clove garlic, crushed
  • Tools:
  • Skewers (if using bamboo skewers, soak them in cold water an hour before using)
  1. Wash the potatoes and cut so they're in similarly-sized pieces suitable for skewers.
  2. Boil the potatoes in salted water until just tender.
  3. Drain and rinse the potatoes under cold water then thread onto skewers.
  4. In a small bowl, mix the oil, herbs and garlic together.
  5. Brush the herb oil onto the skewered potatoes and barbecue until lightly charred.
  6. Alternatively, cook them indoors on a griddle pan.
