- juice of 1 lemon
- juice of ½ an orange
- ¾ cup 150g sugar
- 1 teaspoon ground cinnamon or 1 cinnamon stick

- 4 firm pears
For the cinnamon cream
- ⅔ cup 150ml whipping cream double cream
- 1 teaspoon sugar
- ½ teaspoon ground cinnamon
