This refreshing berry iced tea is quick and easy to make. Berry tea is infused with ginger and lemon juice then served with berries and crushed mint over ice.
2tablespoonsugar(optional) or honey or other sweetener
1inchpiece of ginger(peeled and cut into five slices)
3tablespoonsof loose berry tea(or 3 tea bags; I used We Are Tea Super Berry)
Juice of 1 lemon
To serve
10raspberries
10blueberries
5strawberrieshalved
15mint leaves
½a lemonthinly sliced
ice cubes
Instructions
Bring the water to a boil, add the sugar and ginger and stir until the sugar dissolves.
Remove from the heat, add the tea and allow to steep for 5 minutes.
Strain out the leaves and ginger over a bowl and allow the liquid to cool and stir in the lemon juice.
Taste for sweetness. If you’d like it sweeter, dissolve a little sugar in hot water and add to the tea. If you’d like it more tart, add a little more lemon juice.
Add the ice to a large jug or into glasses, along with the fruit and mint leaves lightly crushed to release their flavour. Pour in the cooled tea and serve chilled.
