Notes
Potatoes can become very gummy if they are overworked so make sure you mash them instead of stirring to get the correct consistency.Save about ¼ cup of the liquid they are boiled in if you’d like to thin out your mashed potatoes. The starchy water will help them stay creamy.Make sure you are using UNFLAVORED dairy free milk as a lot of them can be flavored with vanilla. It’s best to use soy milk as it is the most neutral in flavor. For a rustic mashed potato, leave the skins on.Add in some garlic or onion powder to the mashed potatoes.Boil the potatoes with some fresh rosemary or thyme for a pop of flavor. For a hearty chunky mashed potato, use a potato masher and mash slightly to leave in potato chunks.Use a combination of potatoes like red bliss, fingerling and golden potatoes.
