Instructions
Heat the milk and cream together over a medium/low heat until hot (but don’t allow it to boil).
Add 2 tablespoons of the warm milk mixture to a small dish and stir in the cornstarch to create a thick ‘slurry’, then pour it into the pan of milk.
Pour in the sugar, cocoa powder, chocolate, vanilla and salt. Heat gently, stirring, for a few minutes until the chocolate melts and the mixture thickens slightly.
Remove the pan from the heat and let the fudgesicle mixture cool.
Whisk the mixture briefly, then pour into popsicle molds and freeze for at least 4 hours until solid.

When heating up the milk, it's important to make sure it doesn't get too hot and scorch. This could give the homemade fudgesicles an unpleasant flavor.If you want to avoid any lumps, make sure to sift the cocoa powder before adding it to the milk mixture.Assemble everything before turning on the heat. This way, once the milk is hot, you can add everything in quickly and easily.The time it takes to freeze the fudge pops will depend on your freezer and how warm the mixture is. They should freeze in 4 hours, but it's best to freeze overnight.
