Ingredients

sugar

fresh lemon juice
approx 2 lemons (120ml)

Lemon peels
unwaxed organic lemons
Instructions
Add the sugar, lemon juice and water to a pot, along with 1 of the lemon peels, chopped.
Bring to a boil, then reduce the heat and simmer for 10 minutes.
Remove from the heat and cool slightly.
Place a sieve over a bowl and carefully pour in the syrup to strain. Discard the peels.
Allow the mixture to cool and pour into a sanitized bottle or jar.
Refrigerate for up to 2 weeks.
