60gShelled roasted unsalted pistachioschopped, ½ cup Approximately 60–65 g
Instructions
Shell and roughly chop the pistachios. Aim for a coarse chop rather than fine crumbs. This exposes more of the nuts to the liquid while making them easier to strain later.
Add the sugar, water and chopped pistachios to a small, heavy-based saucepan.
Place the saucepan over a medium-low heat, stirring occasionally until the sugar dissolves.
Reduce the heat and simmer for 15 minutes.
Remove the saucepan from the heat and leave the pistachios in the liquid while it cools slightly.
Place a fine-mesh sieve over a clean bowl or large jug and carefully pour in the syrup. Let the liquid drain naturally. Pressing the nuts firmly can push fine particles through the sieve, making the syrup cloudier.
Transfer to a bottle or jar.
Once completely cool, seal the container and place it in the fridge.
Notes
Keep the simmer gentle. Rapid boiling evaporates more water and can produce a syrup that's too thick for drinks.
Use fresh pistachios. Older nuts can taste stale or slightly bitter, and that flavour carries into the syrup.
Don't skip the cooling stage. The nuts continue infusing while the liquid cools.
Strain twice if necessary. A second pass through a finer sieve helps remove small particles.
Avoid grinding the nuts. Pistachio dust makes the syrup harder to filter and can leave sediment.
Use a clean bottle. Nut-infused homemade syrup is perishable, so clean equipment and refrigeration matter.
