120ml - approx 4 limes

Instructions
Add the sugar, lime juice and water to a pot.
Bring to a boil, then reduce the heat and simmer for 10 minutes.
Remove from the heat and cool slightly.
Place a sieve over a bowl and carefully pour in the syrup to strain out any 'bits'.
Allow the mixture to cool slightly, then pour into a sanitized bottle or jar. The syrup will thicken as it cools.
Refrigerate for up to 2 weeks.
