2tablespoonsalmond butteror peanut butter
1teaspoonvanilla extract
Pinchof sea salt
2tablespoonsdark chocolate chips

Instructions
Add the dates and almonds to a food processor and pulse briefly. Add the coconut, almond butter, vanilla and sea salt (save the chocolate chips for later).
Process until the mixture comes together. If needed, add a tablespoon of water.
Stir in the chocolate chips.
Using a tablespoon or small cookie scoop, portion the mixture into even pieces.
Roll each portion gently between your hands until smooth.
If the mixture starts sticking to your palms, lightly dampen your hands with water.
Roll in coconut if you like.
Notes
Recipe Tips
Use the squeeze test before adding water. The mixture often looks drier in the processor than it actually is.
Drain soaked dates thoroughly. Excess soaking water can turn a nicely chewy mixture into a sticky paste.
Don't over-process the almonds at the beginning. Some fine nutty texture makes the finished balls more pleasant to eat.
Stir in the chocolate last. This keeps recognisable pieces of chocolate throughout each ball.
Dampen your hands rather than the mixture when shaping. It's an easy way to control surface stickiness without changing the consistency of the whole batch.
Chill softer energy balls before judging them. Almond butter and dates both firm somewhat in the refrigerator, so a slightly soft freshly rolled ball isn't necessarily a problem.
Measure nut butter carefully. An overly generous spoonful can make the mixture oilier and softer than expected.
