This crisp Brussels Sprouts Caesar Salad is full of shredded sprouts, parmesan cheese, croutons and a homemade light caesar dressing. A tasty holiday slaw.

For the Brussels Sprout Slaw

Brussels sprouts
trimmed and very finely shredded

tablespoon
grated Parmesan
½
lemon zested
Caesar Dressing:
Use store bought caesar dressing or make your own:

tablespoons
mayonnaise

tablespoon
Greek yogurt or sour cream
1
small garlic clove
grated
1
teaspoon
Dijon mustard
1
tablespoon
lemon juice
2
teaspoons
Worcestershire sauce
1
tablespoon
finely grated Parmesan
Black pepper
To serve:
Croutons
store bought or cubes of toasted bread
Instructions
Shred the trimmed sprouts finely by hand or with a food processor and slicing blade.
Whisk all the dressing ingredients together. Adjust lemon or parmesan to taste.
Toss the shredded sprouts with the parmesan and lemon zest.
Add dressing and gently too to coat the brussels sprouts.
Let the slaw sit for 10–15 minutes before serving to soften the sprouts slightly.
Serve topped with croutons.
