Instructions
In a small saucepan, combine the water and sugar. Heat over a medium heat, stirring occasionally until the sugar is completely dissolved.
Once the sugar is dissolved and the mixture begins to simmer, remove the saucepan from heat and stir in the peppermint extract.
Let the syrup cool to room temperature (it will thicken slightly as it cools), then pour it into a cleaned glass bottle or jar.
Store: Store in the refrigerator for up to 1 month.
