Ingredients

pineapple chunks
fresh, canned or frozen - no need to thaw - 165g
Instructions
Add all ingredients to a pot and bring to the boil. Reduce the heat and simmer for 10 minutes.
Remove from the heat and allow to cool slightly.
Place a fine mesh sieve over a bowl and pour in the mixture to remove the pineapple pieces.
Pour into a bottle or jar and store in the refrigerator once completely cooled.
Note: the pineapple simple syrup will thicken further once cool.
