Sweet, tangy, and tropical – this simple homemade pineapple syrup is perfect for adding a burst of flavor to pancakes, drinks and desserts.

  • White Sugar: Provides the sweetness that balances the tanginess of the pineapple. You can substitute with brown sugar for a richer flavor.
  • Water: Helps dissolve the sugar and extract the flavors from the pineapple.

Instructions

Chopping fresh pineapple.

If using fresh pineapple, cut the ripe flesh into chunks. If using canned then just drain it. When using frozen pineapple there is no need to thaw it.

Heating the pineapples, sugar and water.

Add all ingredients to a pot and bring to the boil. Reduce the heat and simmer for 10 minutes.

Remove from the heat and allow to cool slightly.

Draining the pineapples out of the syrup with a fine mesh strainer over a glass dish.

Place a fine mesh sieve over a bowl and pour in the mixture to remove the pineapple pieces.

Pour into a bottle or jar and store in the refrigerator once completely cooled.

Variations

  • Spiced Pineapple Syrup: Add a cinnamon stick, a few cloves, or a piece of star anise while simmering.
  • Citrus Pineapple Syrup: Add the zest of a lemon, lime, or orange for a citrusy twist.
  • Ginger Pineapple Syrup: Add a few slices of fresh ginger for a spicy kick.

Storage

Store: Store the pineapple syrup in a sealed bottle or jar in the refrigerator. It will keep for up to 2 weeks in a santized jar (run it through the dishwasher on a hot wash).

For longer storage, you can freeze the syrup in ice cube trays and transfer the cubes to a freezer bag. Thaw in the refrigerator before use.

Top tips

  • Straining: For a smoother syrup, strain through a fine mesh sieve. If you prefer a bit of texture, you can leave some of the pineapple pulp in.
  • Consistency: Remember that the syrup will thicken as it cools. If it becomes too thick, you can thin it with a bit of water.
  • Sweetness: Adjust the amount of sugar to your taste. If you prefer a less sweet syrup, reduce the sugar slightly. If you don't want to use refined sugar, you can use honey instead.

FAQ

Can I use brown sugar instead of white sugar?

Yes, brown sugar will give the syrup a richer flavor and darker color.

Can I use the leftover pineapple chunks?

Ingredients
 

  • 1 cup white sugar 200g
  • 1 cup water 240ml
  • 1 cup pineapple chunks fresh, canned or frozen - no need to thaw - 165g

Instructions
 

  • Add all ingredients to a pot and bring to the boil. Reduce the heat and simmer for 10 minutes.
  • Remove from the heat and allow to cool slightly.
  • Place a fine mesh sieve over a bowl and pour in the mixture to remove the pineapple pieces.
  • Pour into a bottle or jar and store in the refrigerator once completely cooled.
  • Note: the pineapple simple syrup will thicken further once cool.
