BOARD: Get a board/platter/serving tray. Something large enough for all your guests that has a food-safe surface.
FRUIT: Prep all the fruit - ensure it's ripe, cut and ready to eat.
TOPPINGS & DIPS: Prepare the toppings and dips. Whip up any dips you want to include and gather some maple syrup or any other syrups. Where necessary, put into small bowls or jugsTip: small glasses or vintage teacups work well if you don't have little bowls.
COOK: Cook the pancakes, crepes etc... If including eggs, sausages or any other breakfast foods, then start cooking them now.
ASSEMBLE: Put the pancake board together. Start with the largest items and place them onto your tray decoratively. Work your way through all your fruit and toppings, grouping them together until it's piled high and full.
Fluffy Buttermilk Pancakes
Add the flour, sugar, salt, baking soda and baking powder to a mixing bowl and whisk.
Add the buttermilk, eggs, melted butter and vanilla to a jug and whisk until smooth.
Pour the buttermilk mixture into the dry ingredients and gently stir to combine. TIP: Don't overmix or the pancakes won't be as fluffy. It's okay to have lumps in the batter.
Heat a little oil in a frying pan over medium-low heat.Add ⅓ cup (80 ml) of batter to the pan and cook until bubbles form on the top, then flip and cook until the other side is golden.
Repeat until the batter is all used up.
