Broccoli in a pan of water.

Blanch the broccoli by boiling briefly then plunging into a bowl of ice water.

Whisking the eggs and milk.

Crack the eggs into a bowl and add the milk, salt, and pepper. Whisk the eggs until well beaten, and the mixture becomes slightly frothy. Set aside.

Heating the broccoli in the pan.

Place a non-stick skillet over medium heat and add butter or cooking oil. Add the broccoli to the skillet and sauté for 1-2 minutes until it's heated through.

Eggs cooking with the broccoli.

Pour the beaten egg mixture over the broccoli in the skillet. Tilt the pan to spread the eggs evenly. Allow the eggs to cook and set around the edges.

Cheddar cheese added to the omelet.

Sprinkle the shredded cheddar cheese evenly over one half of the omelet.

Cast iron skillet with a cooked broccoli omelet on a table.

Once the edges of the omelet are set and the center is just slightly runny, use a spatula to fold the omelet in half, covering the cheese.

Cook for an additional 1-2 minutes until the cheese melts, and the omelet is cooked to your desired doneness.

Variations

  • Swap cheddar cheese for mozzarella or feta for a different flavor profile.
  • Add more veggies.
  • Incorporate diced bell peppers or onions for added crunch and flavor.

Serving Suggestions

  • Enjoy your broccoli omelette for breakfast, brunch, lunch or dinner!
  • Serve with slices of White Soda Bread or a side salad for a complete meal.
  • Pair with avocado slices or salsa for added flavor and nutrition.
  • Enjoy alongside fresh fruit for a balanced breakfast option.

Storage Advice

  • Store any leftover broccoli omelette in an airtight container in the refrigerator for up to two days.
  • Reheat gently in the microwave or on the stovetop in a frying pan until warmed through.

Top tips

  1. Use a non-stick skillet to ensure the omelette doesn't stick.

Equipment

  • mixing bowl
  • skillet / frying pan

Ingredients

  • ½ cup chopped broccoli florets
  • 2 large eggs
  • 2 tablespoons milk
  • Salt and pepper to taste
  • 3 tablespoons shredded cheddar cheese
  • 1 tablespoon butter or cooking oil
  • Optional toppings: chopped fresh herbs

Instructions

  • Cut the broccoli into small pieces. Add them to a pot of boiling water (or a steamer basket over boiling water) and cook for 3 minutes or until it's slightly tender but still has a crisp texture. Drain and set aside.
  • Crack the eggs into a bowl and add the milk, salt, and pepper.
  • Whisk the eggs until well beaten, and the mixture becomes slightly frothy. Set aside.
  • Place a non-stick skillet over medium heat and heat the butter or cooking oil.
  • Add the broccoli to the skillet and sauté for 1-2 minutes until it's heated through.
  • Pour the beaten egg mixture over the broccoli in the skillet.
  • Tilt the pan to spread the eggs evenly. Allow the eggs to cook and set around the edges.
  • Sprinkle the shredded cheddar cheese evenly over one half of the omelet.
  • Once the edges of the omelet are set and the center is just slightly runny, use a spatula to fold the omelet in half, covering the cheese.
  • Cook for an additional 1-2 minutes until the cheese melts, and the omelet is cooked to your desired doneness. Be careful not to overcook, as the eggs will continue to cook when off the heat.
  • Slide the omelet onto a plate, and if desired, garnish with fresh herbs.
