    Kale Biscotti with Almonds

    This almond kale biscotti recipe is simple and tasty. I've made it naturally green with... kale! But feel free to leave it out if that's too wacky.

    Biscotti is a wonderful Italian cookie. The firm dense cookies are usually served alongside a coffee to dunk them into. Bliss.

    The crunchy cookies instantly transport me to Italy in my mind.

    I've turned this one into a vegetable dessert by adding pureed kale!

    It sounds wacky, but you can't taste the kale in this biscotti - they just taste of almonds.

    This almond kale biscotti recipe is simple and tasty. I've made it naturally green with... kale! But feel free to leave it out if that's too wacky.

    Let me shake you by the shoulders and squeal animatedly that YOU CAN'T TASTE THE KALE AND IT'S GREEN!!

    Be sure to have it with a perfectly made espresso.

    Kale and Almond Biscotti

    Ingredients
     

    • 1 cup (60g) kale
    • 2 ½ cups (250g) all-purpose flour (plain flour)
    • ½ teaspoon baking powder
    • ½ cup (100g) caster sugar
    • 1 cup (125g) blanched almonds chopped
    • 2 eggs
    • 1 teaspoon almond extract

    Instructions
     

    • Preheat oven to 325F / 160C. Line a baking tray with parchment paper.
    • Simmer or steam the kale leaves for a few minutes until tender. Drain and refresh under cold water. Drain, squeeze out any excess water and puree in a food processor or with a hand held stick blender. It will still be slightly stringy. Set aside.
    • In a large bowl, stir together the flour, baking powder, sugar and chopped almonds.
    • In a separate bowl, whisk the eggs. Add the almond extract and kale and mix well. Add to the flour mixture and work into a firm dough. You may need to use floured hands.
    • Turn onto a lightly floured surface and shape into a log the length of the baking tray.
    • Place it onto the prepared tray and bake for 35-40 minutes or until it begins to turn golden. Leave the oven on.
    • Allow to cool for 15 minutes then cut at a slight angle into even slices ½ inch thick.
    • Place the slices, cut side up, onto the lined baking tray and bake again for 12 minutes. Flip each piece over and bake for a further 12 minutes. Transfer to a wire rack to cool completely. Store in an airtight container.

      This was very tasty. However, I was expecting it to be sweet. Since I really like only sweet biscotti dipped into my coffee, I like this better plain or with some creamy cheese spread on it. Also, I had an issue with the recipe. I halved it, first of all. Only one egg was not enough liquid to bring it together, so I ended up adding about 1/2 cup water. Maybe it has something to do with the way I prepared the kale? It didn't add any liquid at all to the dough but was instead sprinkled throughout.

      Ok, I was born in Vancouver and raised in Santa Monica, CA, but here I am and we have an abundance of local kale year round here. I made these last month....they were AWESOME...but my kale ended up being more like finely chopped and became flecks rather than a purée and lovely green. Can you give more specific pre-cooking directions? Perhaps I didn't steam long enough? I made a kale cake from another recipe and they had me boil it until it was very soft and green. Thank you in advance!

      Biscotti is one of absolute weaknesses, but given that your recipe contains the goodness of kale I would let myself off from being utterly lured in by the vibrant colour and almond crunch x

      Love the colour Kale gives to bakes. It's like matcha, but a lot cheaper. These biscotti look quite stunning.

      First off, let me just say, I LOVE how WIDE your biscotti is! When I've made it in the past & all the biscotti I've ever bought are the narrow little bits for dunking in coffee. And I'm not a coffee drinker so I always want more and more and more. But YOURS are the perfect size! 🙂 It's like ... crunchy cake! & I'm glad that you played into the over the top US-style St Pat's. 🙂 Everybody should, at least once! 😀

      Such a pretty color! I've used spinach a lot to get a pretty color in things like smoothies and muffins, but never kale. I love the idea! Kale is so healthy and yummy. Thanks for sharing these! 🙂

      Mmmm! This recipe looks like I need to try it. I made your apple pie with kale and lemon, and you're right, I can't tell that the kale is in the crust - except that it's green. It was delish!!
