This crisp Brussels Sprouts Caesar Salad is full of shredded sprouts, parmesan cheese, croutons and a homemade light caesar dressing.

If you like Caesar salad but hate soggy lettuce, this Brussels Sprout Caesar Slaw is worth trying over the holidays!

The finely shredded Brussels sprouts stay crunchy, soak up the dressing without going limp, and bring a slightly nutty flavor that works beautifully with Caesar dressing.

The salad is finished with lemon zest, Parmesan, and croutons, which makes it taste fresh.

The flavor is bold but balanced. You get saltiness from the cheese, tang from lemon, richness from the dressing, and crunch from both the sprouts and the croutons.

It is creamy without being heavy, especially if you mix mayonnaise with Greek yogurt.

Making it is straightforward. You shred the Brussels sprouts very finely (with a knife or food processor) toss them with homemade dressing, and finish with toppings just before serving.

Ingredients

  • russels sprouts. These should be trimmed and shredded very finely for the best texture. A mandoline or sharp knife works well, and bagged shaved sprouts can be used in a pinch.
  • Parmesan. Freshly grated Parmesan adds saltiness and umami, and Pecorino Romano can be substituted for a sharper bite.
  • Lemon zest. This adds brightness without extra acidity, and it balances the richness of the dressing.
  • Dressing Ingredients.
  • Mayonnaise. This forms the creamy base of the Caesar dressing, and vegan mayonnaise can be used if needed.
  • Greek yogurt or sour cream. This lightens the dressing and adds tang, and either option works well.
  • Garlic clove. Freshly grated garlic gives the dressing its signature bite.
  • Dijon mustard. This adds depth and helps emulsify the dressing.
  • Lemon juice. Fresh lemon juice sharpens the flavors and keeps the dressing from tasting flat.
  • Worcestershire sauce. This provides savory complexity. Not all are vegetarian, but you can make your own Vegan Worcestershire Sauce.
  • Parmesan. Adding cheese directly to the dressing boosts umami throughout the salad. You can make your own Vegan Parmesan Cheese.
  • Black pepper. Freshly ground pepper finishes the dressing with gentle heat.
  • To Serve.
  • Croutons. Store bought croutons work, or you can toast cubes of bread with olive oil for extra crunch. Or try making Air Fryer Croutons.

Shred the trimmed sprouts finely by hand or with a food processor and slicing blade.

Whisk all the dressing ingredients together.

Let the slaw sit for 10-15 minutes before serving to soften the sprouts slightly. Serve topped with croutons.

Storage

This Brussels Sprout Caesar Slaw stores very well in the refrigerator. Keep it in an airtight container for up to three days. If possible, store croutons separately and add them just before serving to maintain crunch.

The salad can be made several hours ahead, and it often tastes better after resting.

Freezing is not recommended, as raw Brussels sprouts and creamy dressing do not thaw well. For make-ahead meals, prepare the dressing and shred the sprouts up to two days in advance, then toss together when ready.

Shred the Brussels sprouts as finely as possible for the best texture.

Taste the dressing before adding it to the slaw and adjust seasoning as needed.

For the Brussels Sprout Slaw

  • 400 g Brussels sprouts trimmed and very finely shredded
  • 1 tablespoon grated Parmesan
  • ½ lemon zested

Caesar Dressing:

  • Use store bought caesar dressing or make your own:
  • 3 tablespoons mayonnaise
  • 1 tablespoon Greek yogurt or sour cream
  • 1 small garlic clove grated
  • 1 teaspoon Dijon mustard
  • 1 tablespoon lemon juice
  • 2 teaspoons Worcestershire sauce
  • 1 tablespoon finely grated Parmesan
  • Black pepper

To serve:

  • Croutons store bought or cubes of toasted bread
