I don't know about you, but my freezer is ALWAYS stocked with a bag of frozen peas.

They're versatile, quick to cook and a family-friendly way to enjoy green veg. And, did you know that frozen peas are better than fresh? 

The soup is super quick to make from scratch with a handful of pantry ingredients and minimal prep.

It turns frozen peas into a creamy, rich, thick soup that you can whip up in minutes!

It's freezer-friendly too, so I always make extra to freeze for quick future lunches.

Ingredients

This simple recipe only needs a few ingredients. Here they are, along with substitutions.

Oil - use whatever you have: canola, olive, sunflower etc... Want this recipe to be oil free? Just cook the onions in a splash of water to prevent them sticking to the pan.

Onion - frozen onion makes this super convenient.

Vegetable stock (vegetable broth) - out of stock? Just use water, then season the soup well with salt and pepper.

Frozen peas - petits pois, petite peas, garden peas, English peas, any frozen peas work well.

How can I make soup from frozen peas?

It's so easy! All you have to do is cook chopped onion in a pan with a little oil until soft, but not browned. Add vegetable stock and frozen peas and cook for 5 minutes. Puree in a liquidiser or with an immersion blender and enjoy!

Recipe variations

Herbs: try adding a tablespoon of fresh chopped mint or a tablespoon of fresh chopped basil, stirred in at the end before serving. 
Cream: To serve, swirl in a dollop of plain Greek yogurt, vegan yogurt, or cream.
Onions: try swapping the onion for shallots.
Chunky: You don't have to blend this soup. It's also nice served unblended with the peas and onions in the vegetable broth.

Easy Pea Soup

Equipment

  • Pot
  • immersion blender (or liquidizer)

Ingredients
 

  • 1 tablespoon oil
  • 1 onion chopped
  • 3 cups 750ml vegetable stock
  • 3 cups 450g frozen peas

Instructions
 

  • Heat the oil in a large saucepan, then add the onion and cook on a low heat for 5 minutes until soft but not browned.
  • Stir in the stock, cover and cook for a further 5 minutes.
  • Stir in the peas, bring it back to a simmer and cook for a further 5 minutes, or until the peas are cooked.
  • Puree the soup in a blender/liquidiser or with an immersion blender. Enjoy!
