1. Place the softened cream cheese in a medium mixing bowl and beat with an electric hand mixer until smooth and creamy. I find it's worth taking a little time over this because any lumps left at this stage become harder to remove once the other ingredients are added.

2. Add the sifted icing sugar, black cocoa powder, vanilla extract and salt. Start mixing on a low speed to prevent the cocoa powder from escaping the bowl, then increase the speed slightly and beat until everything is evenly combined.

3. The mixture will look very dark and quite thick at this point, which is exactly what you want.

4. Gradually add the double cream, mixing between each addition until the dip reaches a thick but easily scoopable consistency. I usually stop and check the texture with a spoon rather than adding all the cream at once. It should hold soft swirls without being so firm that biscuits break when dipped.

5. Spoon the cheesecake mixture into a shallow serving bowl and use the back of a spoon to create a few generous swirls across the surface. Don't worry about making them too neat. The uneven ridges and shadows make the dark cocoa look even more dramatic.
