As a fan of homemade treats that strike the perfect balance between decadence and wholesomeness, this recipe is one of my go-tos. The combination of creamy peanut butter, ripe bananas, and rich chocolate chips creates a real crowd-pleaser of a muffin recipe!

My kids go pretty wild for these muffins. They're massive fans of the combo of pb and chocolate (go Reece's peanut butter cups!). So they always devour these muffins.

They make a great after school snack, portable breakfast on-the-go, or a not so sweet dessert.

Instructions

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.

In another bowl, mix together the peanut butter, melted butter, mashed bananas, eggs, and vanilla extract until well combined.

Pour the wet ingredients into the dry ingredients. This is the Muffin Method.

Gently fold the mixture together until just combined. Avoid overmixing; a few lumps are okay.

Ingredients
 

  • 1 ½ cups all-purpose flour 180 grams
  • ½ cup granulated sugar 100 grams
  • ¼ cup packed light brown sugar 50 grams
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup creamy peanut butter 120 grams
  • ¼ cup unsalted butter melted and cooled (60 grams)
  • 2 ripe bananas mashed (about 200 grams)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¾ cup chocolate chips 135 grams

Instructions
 

  • Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease the muffin cups.
  • In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.
  • In another bowl, mix together the peanut butter, melted butter, mashed bananas, eggs, and vanilla extract until well combined.
  • Pour the wet ingredients into the dry ingredients. Gently fold the mixture together until just combined. Avoid overmixing; a few lumps are okay.
  • Gently old in the chocolate chips until evenly distributed in the batter.
  • Spoon the batter into the prepared muffin cups, filling each one ⅔ full.
  • Bake in the preheated oven for 20 minutes or until a toothpick inserted into the center comes out clean. The tops should be golden brown.
  • Allow the muffins to cool in the pan for a few minutes, then transfer them to a wire rack to cool completely.
