Peas on toast with mint and radishes is a light, refreshing toast recipe made with mashed peas, fresh mint, lime juice, and crunchy radish slices. It is simple, 5 minutes recipe that's perfect for breakfast, lunch, or a snack.

Peas on toast with mint and radishes fits that description perfectly. It's bright green from the peas, cooling from the fresh mint, tangy from lime juice, and finished with thin slices of peppery radish on top.

The flavor is refreshing and light but still satisfying. I think of it as a spring or summer toast, though I make it year-round using frozen peas.

The best part is how quickly it comes together. While the bread toasts, the peas boil in just a few minutes. A quick mash with mint and lime juice, a swipe across the toast, and it is ready to enjoy.

This recipe is versatile too. You can serve it for breakfast with a soft-boiled egg, as a light lunch with salad, or as a colorful snack for guests.

Peas

Peas are the star of this recipe.

They bring sweetness, creaminess, and bright green color.

Frozen peas are just as nutritious as fresh ones and make the recipe accessible year-round.

Peas are high in fiber and protein, which makes the toast more filling than you might expect. They also pair naturally with mint, which is why this combination works so well.

Peas are one of those staples that most people have on hand in their freezer.

Ingredient List

  • Peas. Fresh or frozen both work. Frozen peas are the easiest option and still taste sweet and bright.
  • Mint. Adds freshness. You can use basil or parsley if mint is not available.
  • Lime or lemon juice. Brings acidity. Lemon is more common, but lime gives a sharper taste.
  • Radishes. Adds crunch and a peppery bite. Cucumber or pickled onions are good alternatives.
  • Bread. Any sturdy bread works. Sourdough, whole grain, or rye are especially good.
  • Salt and pepper. Enhances flavor and balances the sweetness of the peas.

Variations

  • Add crumbled feta cheese.
  • Spread ricotta under the peas.
  • Use avocado in the mash with peas.
  • Add chili flakes for heat.
  • Replace mint with basil.
  • Top with cucumber slices instead of radish.
  • Add a poached or fried egg on top.
  • Use whole grain crackers instead of bread.
  • Add garlic to the pea mash.
  • Sprinkle toasted seeds or nuts on top.

Storage, Freezing, Make-Ahead Advice

You can make the pea mash ahead and store it in the fridge for up to 3 days in an airtight container.

If you want to prepare further in advance, you can freeze the mashed peas. Thaw overnight in the fridge and stir before using.

Do not assemble the toast until serving, as the bread will soften. Radishes are best sliced fresh.

How to Make Peas on Toast (with mint and radishes)

This recipe is super quick and super easy. Feel free to customise it however you like! Enjoy your quick and tasty vegan brunch recipe.

Collage: 1 peas cooking, 2 chopped mint, 3 chopped radishes, 4 mashed peas.

1. Boil the fresh or frozen peas.

2. Finely chop the fresh mint leaves. 

3. Thinly slice the radishes (if using). 

4. Mash the peas with the mint and a little lime or lemon juice, then spread onto toast and top with the radishes. Add a little salt and pepper if desired.

Ingredients
 

  • 200 g (1 cup) peas (frozen or fresh)
  • 1 teaspoon fresh mint leaves chopped
  • ½ teaspoon fresh lime juice or lemon juice
  • 3 radishes sliced
  • Bread toasted, to serve
  • Salt and pepper to taste

Instructions
 

  • Boil the peas for a few minutes until cooked. 
  • Drain and lightly mash with a fork. Add the mint and lime juice and mash to combine.
  • Spread over toast and top with radish slices and a little salt and pepper.

    Those are some pretty peas there! Since winter doesn't want to give up I've been serving as colorful a meal as I can just to keep our spirits up. This toast is about as cheerful a lunch as I could possibly come up with. It's so colorful with some great flavors and textures. I'll be serving this one soon.

    Ooh yum! I had radishes... and peas are always in the freezer so I made it for lunch. So quick and easy and I love the flavor. A change from avo toast for sure.

    What an interesting idea Kate. I love avocado on toast and radishes but never thought of eating my bread with mashed peas, very clever!
    You are sooo right about avocados, I really hate when they are not ripe enough or have brown spots inside... it is like a lottery, you never know what you will get.
