Add the ginger to a saucepan, along with the honey and water, over a medium heat. Heat the syrup, stirring occasionally, for 5 minutes.

Remove the saucepan from the heat and let it cool and infuse for at least 30 minutes, stirring occasionally.

Spooning the ginger pieces out of the syrup.

Strain through a fine mesh sieve over a bowl, or use a slotted spoon, to remove the ginger slices.

Pour into a sanitized bottle or jar and store in the refrigerator.
