    Glazed apricots are sweet, plump, delicious, and super easy to make. Simmering dried apricots in a sweet syrup turns them into something very special. Serve your candied apricots over ice cream, yogurt, or oatmeal, on desserts, with cheeses on a charcuterie board, or as a tasty snack.

    Glazed apricots

    Glazed apricots turn plain dried apricots into something pretty special! They're really straightforward and simple to make, resulting in a tasty and versatile treat that can be enjoyed in many different ways!

    Simply poach dried apricots in a syrup of water, honey, sugar, lemon juice, and vanilla. They absorb the syrup, get moist and plump, and get a wonderfully rich flavor and texture.

    You'll end up with sweet glazed apricots and rich apricot-infused syrup.

    They burst with flavor in every bite.

    Use your candied / glazed apricots as a snack, with cheeses on a charcuterie board or on breakfast or desserts.

    We love serving them, along with their syrup, on vanilla ice cream on a warm summer evening.

    They're also perfect spooned over oatmeal or Greek yogurt.

    Try them on cheesecake, over pound cake, or in a layered parfait with whipped cream and crumbled cookies. The possibilities are pretty endless!

    Glazed apricots are also a popular Australian Christmas treat.

    Try serving yours on a Pancake Board (Breakfast Charcuterie Platter), spooned over Lemon Pancakes or piled onto a Cookie Cheesecake Parfait.

    Ingredients

    Apricots, sugar, water, honey, lemon juice and vanilla on a table.
    • Dried apricots - Make sure they don't have pits and cut them out if they do.
    • Sugar - white sugar is the base of the syrup that creates the glaze.
    • Honey - honey adds a rich flavor to the glazed apricots, but you can substitute it for the same quantity of extra sugar instead.
    • Lemon juice - to balance the flavors.
    • Vanilla - pure vanilla extract adds richness and sweetness.

    Instructions

    Add the water, sugar, honey, and lemon juice to a saucepan over medium heat, stirring until the sugar dissolves.

    Stir in the apricots, reduce the heat to low, and simmer, stirring occasionally, for 25 minutes.

    Remove the pot from the heat and stir in the vanilla. Allow the apricots to cool in the pot of syrup to room temperature.

    Store in a sanitized airtight container in the refrigerator for up to 2 weeks.

    Variation

    • Try making glazed prunes instead.
    • Instead of honey, use the same quantity of extra sugar.
    • Swap the vanilla for coconut, almond, or lemon extract.
    • Add a cinnamon stick, star anise, or a few cardamom pods for a wintery spiced flavor.
    • Add a few drops of rosewater for a floral flavor.
    • Simmer the apricots with a small piece of fresh ginger.

    Serving Suggestions

    • Swirled into yogurt or oatmeal for breakfast.
    • Spooned over pancakes, waffles, or French toast - especially good with sweetened sour cream (stir a little powdered sugar into plain cream cheese).
    • As a sweet and savory addition to a cheese or charcuterie board. Just add the glazed apricots to a small dish, along with olives, cheeses, nuts etc...
    • Use as a garnish for cocktails or mocktails. Try adding a few, along with their syrup, to a gin and tonic or vodka soda.
    • Enjoy as a topping for ice cream, cakes, or pies.
    • On a cheese plate with nuts and crackers for an easy appetizer.
    • As a side dish for roasted meats like pork or chicken.
    • As a snack on their own for a tasty treat.

    • 1 cup water
    • 1 cup white sugar
    • 1 cup honey or more sugar
    • 1 tablespoon lemon juice
    • 2 cups dried pitted apricots 400g / 14 ounces
    • 1 teaspoon pure vanilla extract
