Apple pizzas are a fun and tasty healthy snack for kids that you can customise however they like. They're a super quick recipe for breakfast, lunch, dessert or a snack. Endlessly customisable, this healthy snack will definitely delight children. #healthykidssnacks #healthykidsfood #vegetariankids

Apple pizzas are a fun and tasty treat. They're a great healthy kids recipe for breakfast, lunch, dessert or a snack. Endlessly customisable, this healthy snack for kids will definitely delight children (and grown ups!).

Apple pizzas are a quick healthy snack for kids that they'll love. And they couldn't be easier!

All you need to do is core an apple, then cut it into thick slices. Spread them with peanut butter or any nut butter (try my beet nut butter for a bright pink twist or walnut butter!), then add any toppings that you like.

If you're looking for easy snacks for kids, you've found it!

Add little bowls of raisins, blueberries, sliced banana, seeds, coconut or any other toppings and let the kids help make this fruity treat.

Get Your Kids To Eat Anything

Apple Pizzas are a simple but genius idea. Sadly though, I can't take any credit for it.

They come from my blogging chum, Emily Leary, in her debut cookbook, Get Your Kids To Eat Anything.

This fantastic book, published by Mitchell Beazley on 21 March, is a 5-phase programme to change the way your family thinks about food. It includes shopping lists, meal plans, recipes, worksheets and guidance for changing kids' mindset to food.

Author Emily Leary is a multi-award-winning writer, presenter, blogger and vlogger, and a married working mum of two children. In 2011 she launched her blog, A Mummy Too, with food and lifestyle for busy parents.

My thoughts

The book is beautifully laid out and each phase includes a clear explanation of what you’re going to learn and achieve, with advice and commentary, recipes and activities to try out together. The purpose of all is to help bring that phase to life and help you and your family to progress forwards to the next phase.

Note: this isn't a vegetarian book, but there are quite a few veggie recipe or ones that are adaptable.

The journey of the recipes as the book moves through the 5 phases is exciting. It starts with recipes such as Rainbow Pizza, Veggie Toad in the Hole and Lentil Shepherd's Pie. (Apple pizza is in phase 2)

The phase's activities includes getting kids interested in nutrition through a 'kitchen hunt' for carbs, protein etc.., as well as describing a favourite meal to others, thinking of other ways to cook it and describing the tastes of the meal. It's a lovely way to introduce mindful eating to little ones.

Healthy snack recipes for kids

Sometimes I struggle to find evening snacks for kids. Even when they eat their dinner, if we have a late night then they often get hungry again later.

They start asking for cookies or other unhealthy treats, so I love thinking up healthy snack recipes for kids instead. These apple pizzas are perfect.

For years, my kids have called apple wedges with peanut butter, 'midnight feast'.

A book planted the idea of a late night snack in their head, so whenever we're on holiday or they have a sleepover at Grandma's house, they request it (even though they've never stayed up quite as late as midnight!).

Now, instead of simple apple wedges, I'll definitely be making these apple pizzas with fruit toppings!

Ingredients
 

  • 1 tablespoon lemon juice
  • 2 apples
  • 2 tablespoon peanut butter

Toppings (just guidance, use what you like!)

  • 1 banana sliced
  • blueberries
  • raspberries
  • mixed seeds
  • coconut
  • ground cinnamon
  • maple syrup

Instructions
 

  • Fill a mixing bowl halfway with cold water and add the lemon juice.
  • Core the apples and slice into 5mm / ¼" slices, then place into the bowl of lemon water for a few minutes (to stop the apples browning).
  • Drain the apples, then spread a little peanut butter onto one side of each apple ring. 
  • Top with desired toppings (try fresh, frozen or dried fruit, seeds, nuts, coconut, maple syrup, ground cinnamon etc... )
  • Alternatively, set out all the topping ingredients into small bowls and let kids add what they like to their 'apple pizzas!', encouraging them to try new tastes, flavours and textures!

Notes

Experiment with toppings! Here are some ideas:
  • Fresh fruit
  • Frozen fruit
  • Dried fruit
  • Mixed seeds
  • Chopped nuts
  • Coconut flakes
  • Ground cinnamon
  • Ground nutmeg
  • Maple syrup
  • Cacao powder
Also, try spreading them with something besides peanut butter:
  • Tahini
  • Raspberry compote
  • Soft cheese
  • Almond butter
  • Cottage cheese

    It's not only the kids that like apples and nut butters. It's one of my favorite afternoon snacks. I love the idea of letting them put their own toppings on too. What a great idea for a book to start parents teaching their children how to choose the right things to eat.
