Easter dinner can be a pretty epic event. Cooking a massive roast dinner is no mean feat and if you have family coming over then it's pretty hectic.
We'll be having a big roast dinner with all the trimmings, so for dessert I wanted something no-fuss.
I love baking cakes, and my easy carrot cake is great at Easter. But sometimes I just can't face baking (I know!).
If you want a dessert ready in mere minutes, then you must try these hot cross buns ice cream. They're quick, easy and a definite crowd-pleaser.
Although you can use any store-bought hot cross buns, you could also make my carrot and ginger hot cross buns.

You will need:
- Hot cross buns (any flavour works well - I used toffee and dark chocolate)
- Vanilla ice cream (go for a really nice one! Or even a dairy free vegan one)
- Chocolate syrup
Method:
You can pretty much tell how to make these just from looking at the photo! Just toast the hot cross buns, add a scoop of ice cream, drizzle on some chocolate sauce and serve.

Hot Cross Buns Ice Cream Sandwich is such a simple recipe that you can really mix it up and try it in different ways!
Try different flavors of hot cross buns - from traditional raising, to berry, ginger, chocolate etc... You can find many different varieties in supermarkets or make your own.
Switch up the flavor of ice cream! It's incredible with so many flavors, from strawberry or chocolate to pistachio or rocky road.
Instead of chocolate syrup, try drizzling them in a super quick and easy fresh homemade raspberry syrup.
Smash up some chocolate eggs and add them into your ice cream sandwich.
No hot cross buns? No problem! Try making it with croissants, crescent rolls, brioche or challaah. Any sweet bun will do.

Hot Cross Bun Ice Cream Sandwiches
Ingredients
- 4 hot cross buns
- 4 scoops vanilla ice cream
- 4 tablespoons chocolate sauce
Instructions
- Remove the ice cream from the freezer a few minutes before using to thaw slightly.
- Cut the hot cross buns in half and lightly toast them under the grill/broiler.
- Add a scoop of ice cream to the bottom side of each hot cross bun.
- Drizzle with chocolate sauce then add the top of the hot cross bun to make a 'sandwich'. Serve immediately.
