Lettuce soup is quick, easy, tasty, and nourishing! Lettuce doesn't have to be boring. Turn a head of romaine into this warming soup. Add in some peas, lemon, garlic, and onions and you have a delicious lunch in just 10 minutes!

Lettuce soup is a delicious and nutritious meal option that is both low in calories and high in vitamins and minerals. We love how light and healthy it tastes, plus it's ready in just 10 minutes!

It's also incredibly easy to make, requiring only a few simple ingredients. Lettuce soup is a great way to get your daily dose of vegetables and it is a great way to add flavor and variety to your meals. It's also a great way to use up lettuce when you have a lot spare.

A great way to use up romaine lettuce.

This lettuce soup recipe is ready in just 10 minutes.

You only need simple ingredients.

This recipe makes a tasty, warming lunch.

This is a vegan recipe (or vegetarian if you add dairy yogurt or sour cream as a garnish).

Ingredients

You only need a few simple ingredients to make this easy lettuce soup recipe!

  • Romaine Lettuce - I find romaine (the kind you use for caesar salad) or other thick lettuce is best for this soup recipe. Since this isn't a blended soup, it holds up better after cooking.
  • Peas - For extra veggies, add frozen peas, or even frozen chopped carrots or corn, or a mixture.
  • Oil, onion and garlic - the flavor base for the soup recipe.
  • Vegetable stock - you can even swap to Mushroom Stock or Vegan Chicken Broth.
  • Seasonings - black pepper and lemon juice - these seasonings really lift the delicate flavor of the soup.
  • Optional garnishes - Yogurt or sour cream (or vegan versions), chopped fresh mint leaves, lemon zest.

Instructions

Prep the lettuce: Chop the romaine lettuce into chunks.

Make the flavor base of the soup: Heat the oil in a soup pot, then add the onion and cook until soft, stirring often, about 5 minutes. Stir in the garlic and cook for a further minute.

Adding frozen peas to the pot.

Add the rest: Add the stock, lettuce, and peas, bring to a boil then reduce the heat and simmer for 5 minutes.

Finish with seasonings: Stir in the lemon juice and pepper.

Get fancy with garnishes, if desired: Serve garnished with a little yogurt or sour cream and chopped fresh mint leaves.

Substitutions

  • Lettuce - instead of Romaine lettuce, you can use iceberg or bagged lettuce leaves.
  • Peas - feel free to swap the peas for other diced or small frozen vegetables. It's great with carrots, corn and green beans.
  • Vegan - The soup itself is vegan, but to keep it vegan be sure to use dairy free yogurt or sour cream for the garnish.

Variations

  • Add a pinch of chili pepper flakes while cooking to imbue heat into the soup.
  • Try it topped with Air Fryer Croutons.
  • Instead of yogurt topping, try it with Sriracha Aioli.
  • Prefer smooth soups? Add your lettuce soup to a blender and puree it until smooth.
  • Serve it topped with a little gruyere melted onto a slice of Garlic Bread.

Storage

Store: Store your lettuce soup in an airtight container in the fridge for up to 3 days. This soup is best served immediately.

Reheat: Add your soup to a pot and reheat gently on the stove, or add it to a microwavable dish and microwave for a few minutes until heated through, stirring halfway.

Freeze: This soup is not recommended for freezing.

Ingredients
 

  • 1 tablespoon oil
  • 1 onion diced
  • 2 cloves garlic minced
  • 4 cups vegetable stock 950ml
  • 4 cups chopped romaine lettuce approx 1 ½ hearts
  • 1 cup frozen peas 160g
  • 1 tablespoon fresh lemon juice
  • ¼ teaspoon black pepper

Garnish, optional

  • Yogurt or sour cream
  • Chopped fresh mint
  • Lemon zest

Instructions
 

  • Add the oil to a soup pot, and heat over a medium heat. Add the onion and cook until soft, about 5 minutes. Stir in the garlic and cook for a further minute.
  • Add the stock, lettuce and peas, bring to the boil then reduce the heat and simmer for 5 minutes.
  • Stir in the lemon juice and pepper.
  • Serve garnished with a little yogurt or sour cream, lemon zest, and chopped fresh mint.
