- Romaine Lettuce - I find romaine (the kind you use for caesar salad) or other thick lettuce is best for this soup recipe. Since this isn't a blended soup, it holds up better after cooking.
- Peas - For extra veggies, add frozen peas, or even frozen chopped carrots or corn, or a mixture.
- Oil, onion and garlic - the flavor base for the soup recipe.
- Vegetable stock - you can even swap to Mushroom Stock or Vegan Chicken Broth.
- Seasonings - black pepper and lemon juice - these seasonings really lift the delicate flavor of the soup.
- Optional garnishes - Yogurt or sour cream (or vegan versions), chopped fresh mint leaves, lemon zest.

Make the flavor base of the soup: Heat the oil in a soup pot, then add the onion and cook until soft, stirring often, about 5 minutes. Stir in the garlic and cook for a further minute.
Add the rest: Add the stock, lettuce, and peas, bring to a boil then reduce the heat and simmer for 5 minutes.
Finish with seasonings: Stir in the lemon juice and pepper.
Get fancy with garnishes, if desired: Serve garnished with a little yogurt or sour cream and chopped fresh mint leaves.

- 4 cups vegetable stock 950ml
- 4 cups chopped romaine lettuce approx 1 ½ hearts
- 1 cup frozen peas 160g
- 1 tablespoon fresh lemon juice
