Kale soup is one of those comfort foods that I turn to when I need something warm, nourishing, and easy to make.

It’s a creamy, hearty soup that doesn’t rely on heavy cream or complicated techniques.

The star, of course, is kale—packed with nutrients and a mild flavor that works perfectly with the soft potatoes and aromatic garlic.

The soup has a lovely creamy texture, thanks to a quick blitz with a stick blender, and the taste is subtly earthy with a hint of sweetness from the onions.

Making this kale soup is incredibly straightforward, and it’s ready in just about 20 minutes, which makes it perfect for busy weeknights.

All you need to do is sauté a few basic ingredients, simmer, blend, and voila—soup's on!

It's great on its own or paired with some crusty bread (try it with Garlic and Herb Cheese Rolls or Easy Naan Bread, and you can easily adjust it to your taste or dietary needs. Simply swap the milk for a dairy free milk to make it vegan.

You only need store cupboard ingredients to go with it and soon you'll have a dish of green goodness.

  • Kale: The star ingredient; you can use spinach or chard if kale isn’t available.
  • Potatoes: Provide creaminess and body to the soup; sweet potatoes can be used for a sweeter twist.
  • Garlic: Adds a nice depth of flavor; can be adjusted based on preference or substituted with garlic powder.
  • Onion: Adds sweetness and depth; can be replaced with leeks for a milder flavor.
  • Vegetable Stock/Broth: Forms the base of the soup; use low-sodium if preferred.
  • Milk or Dairy-Free Milk: Adds creaminess; any type of milk will work, including almond, oat, or soy.
  • Oil: Used for sautéing the vegetables; olive oil works well, but any neutral oil is fine.
  • Black Pepper: For seasoning; adjust to taste.

How To Make Kale Soup

Stock added to the pot.

Heat the oil in a large saucepan and add the garlic, onion and potato. Cook for 5 minutes, stirring often, until soft.
Pour in the stock and simmer for 10 minutes.

Milk and kale added to the soup and simmered.

Add the milk and kale and cook for 3 minutes or until the kale wilts slightly.

Use a handheld stick blender to puree the soup or transfer to a blender and whiz.

Cook's Tips

  • I like to jazz up my soup with soup toppers such asAir Fryer Croutons, herby beans or a drizzle of cream and a sprinkling of seeds.
  • If you're looking for something to make this soup a bit heartier, try my garlic and herb skillet rolls or soft and fluffy milk rolls.
  • For a chunkier soup, only partially blend the mixture.
  • Add it at the end to keep its vibrant color and nutrients.
  • Taste and adjust seasoning after blending to get it just right.
  • Every time I make a batch of kale soup, the colour comes out different. It depends on how large a handful of kale you add, it's freshness etc... 

Variations

  • Add Protein: Stir in some cooked chicken, beans, or tofu for extra protein.
  • Spice It Up: Add a pinch of chili flakes or a dash of hot sauce for a spicy kick.
  • Change Up the Greens: Substitute kale with spinach, Swiss chard, or collard greens.
  • Make It Creamier: Use a splash of heavy cream or coconut milk for extra richness.

Serving Suggestions

  • With Crusty Bread: Perfect for dipping and soaking up the creamy broth.
  • Top with Croutons: Adds a nice crunchy texture.
  • Grated Cheese: A sprinkle of Parmesan or cheddar can add a lovely richness.
  • Side Salad: A light side salad pairs well for a balanced meal.
  • Although this soup is delicious on its own, you could try it with my soda bread or cheesy herb rolls.
  • If you're short on time, you can whip up a batch of my yeast-free naan bread recipe in minutes. It's a tasty quick flatbread that's cooked in a frying pan. 

Storage and Freezing Advice

Store the soup in an airtight container in the refrigerator for up to 4 days. It also freezes well—portion it into containers and freeze for up to 3 months. Reheat gently on the stovetop or in the microwave, adding a bit of water if the soup has thickened too much.

Make Ahead Information

This soup can be made ahead and stored in the fridge or freezer. It actually tastes better the next day as the flavors continue to develop. Reheat on the stove over low heat, stirring occasionally.

Special Diets

This kale soup recipe is naturally vegetarian and gluten-free.

Make it vegan: swap the milk for non-dairy milk: soy milk, almond milk or any nut milk all work well.

Ingredients
 

  • 1 tablespoon oil
  • 2 cloves garlic finely chopped
  • 1 onion diced
  • 2 medium potatoes peeled and cubed
  • 3 ¼ cups vegetable stock/broth (750ml)
  • 1 cup milk or dairy free milk (250ml)
  • 2 large handfuls kale chopped
  • black pepper

Instructions
 

  • Heat the oil in a large saucepan and add the garlic, onion and potato. Cook for 5 minutes, stirring often, until soft. 
  • Pour in the stock and simmer for 10 minutes.
  • Add the milk and kale and cook for 3 minutes or until the kale wilts slightly.

    If your kale soup is too thick, stir in a little water and heat it up.
  • Optional serving suggestion: serve with a drizzle of cream (or non-dairy cream) and a sprinkling of seeds.

    My new favourite soup recipe! This really is one of the easiest and tastiest recipes I’ve ever tried. It’s hard to believe something so healthy could be so warm and comforting. I added some leftover celery that needed to be used up and it seemed to work just fine.

    So exciting to get a new recipe for vegetarian soup! Modified to suit myself, didn't fry the onion and garlic, just boiled in the stock, and i didn't add milk. The soup was DELICIOUS! Thank you for a recipe I will use over and over again in the future! So tasty!

      I made kale soup today. I used organic Tuscan kale and a white onion and white sweet potatoe, and a little fresh nutmeg at the blending stage. It was very nice, thank you! Now I can't wait to make the beetroot soup, it look fabulous.

      This is delicious and easy. I didn’t have any potatoes so I cheated and added some instant potatoes to thicken it. Freezes great, too, so you can have it even faster!

    This soup sounds really delicious but I noticed that the sodium is very high for one serving, looking at the ingredients I can't figure out what would make that so ? Appreciate any input. I have to watch my sodium intake for health reasons.
