You’ll love this refreshing Raspberry Soda recipe that’s made from scratch with simple ingredients and fresh or frozen raspberries. It’s the perfect recipe to have on hand to create a soda that's free of chemicals or to make a great spring or summer cocktail!

Raspberry soda is super quick and easy to make using raspberries (fresh or frozen) and just a few pantry ingredients.

It's sweet, tangy and absolutely delicious.

I absolutely love when raspberries are in season for so many different reasons.

The contrast between sweet and tart makes them a great option for snacking, adding to baked goods or smoothies or even to use making easy drink recipes.

This raspberry soda recipe can not only be used to make a great poolside mocktail but it can also easily be turned into a party favorite cocktail by adding your favorite alcohol.

You make your own raspberry soda syrup from scratch which means it’s free of chemicals and preservatives which makes it safe for the whole family to enjoy. 

This soda can be served so many different ways as a mocktail or adult cocktail.

It’s the perfect drink to enjoy at the beach, by the pool or any time of the year. 

You can use fresh or frozen raspberries so you don’t have to wait until they are in season. 

You’ll get an immune boosting dose of vitamin C from the raspberries which we all could use! 

Ingredients 

Raspberry Syrup:

  • Fresh or Frozen Raspberries - This fruit is tart, tangy and sweet making it the perfect match for sodas and cocktails. Feel free to use fresh or frozen raspberries.
  • Granulated White Sugar - This is what sweetens it and gets dissolved into the water.
  • Water - Needed to thin it out and give room for the sugar to dissolve.
  • Vanilla Extract - Adds a hint of vanilla flavor that pairs very well with the variety of flavors in raspberries.

For Serving:

Club Soda - Soda water or sparkling water is the perfect liquid that turns it into a refreshing drink.

Ice - to keep it nice and cold.

Step By Step Tutorial

Raspberry Soda Syrup

  1. Add all ingredients to a pot. 
  2. Stir it together, bring to the boil, then reduce the heat and simmer for 10 minutes, until the raspberries break down.
  3. Place a fine-mesh strainer over a bowl or jug and pour in the mixture.
  4. Press the raspberries into the strainer to extract as much of the raspberry-infused sweet liquid as possible.
  5. Allow the mixture to cool, then pour into a jar or bottle and keep in the fridge for up to 2 weeks.

To Make Raspberry Soda

  1. Fill a glass with ice and add 2 tablespoons of raspberry soda syrup, or more or less to taste (amount will depend on the size of your glass).
  2. Top up with club soda and add a few fresh raspberries.

Cocktails

Homemade raspberry simple syrup is the perfect way to turn fresh summer fruit into a cocktail:

  • Add a shot of vodka or gin to each glass.
  • Turn it into a margarita by adding tequila or orange liquor.
  • Make some raspberry rum punch by adding your favorite light or dark rum and some fresh citrus.
  • Try these other raspberry cocktails.

Tips 

Make sure the syrup is fully cooled before adding it into a glass with sparkling water.

The level of sweetness depends on the person, so more or less syrup may be needed in each glass. Adjust to taste

Homemade raspberry soda is best consumed immediately and tastes best if it’s mixed right before serving.

Serving Suggestions

Variations

Add a tablespoon of heavy cream or coconut milk to make it a raspberry Italian soda.

Try it with 7Up or Sprite for an extra sweet fizzy and tangy raspberry soda taste.

Squeeze in some fresh lemon, orange or lime juice for a tangy citrus flavor.

Use flavored sparkling water for an additional layer of fruit flavor without adding more sugar.

For a deeper vanilla flavor, whisk in some vanilla bean powder to the syrup before adding to the glass.

Add in a dose of probiotics by replacing the soda water with your favorite kombucha. You can also make your own cranberry kombucha to enjoy with the syrup.

Muddle in some fresh mint for a fresh summer flavor.

To Make Gluten Free: This recipe is naturally gluten free as written.

To Make It Vegan: This recipe is naturally vegan and vegetarian as written. But be sure to check that your sugar is vegan (in the US, sometimes it isn't so choose organic and check the label).

Storage 

Storing: Raspberry syrup can be stored in a sanitized jar with a lid for up to 2 weeks in the fridge.

Freezing: Raspberry syrup cannot be frozen as it will not thaw well.

FAQs 

How do you thicken raspberry syrup? In this instance, it’s best if the recipe is made as is so it can mix well with other liquid.

Can I use artificial sweetener or stevia to keep it low carb? You can, however I have not tested this recipe with any other sweetener than sugar.

What else can I do with raspberry syrup? Add it into your favorite smoothie or coffee drink.

For the raspberry syrup

  • 1 cup (200g) granulated white sugar
  • ¾ cup (175ml) water
  • 1 teaspoon vanilla extract

To serve

  • Club soda soda water
