I like making this when I want something fresh that still feels hearty.
Roasting the chickpeas instead of simply adding them straight from the can gives them a lightly crisp exterior and a richer flavour.
One thing I've learned is not to dress the salad too far in advance. Keeping the vegetables crisp makes every bite much more enjoyable, especially if you're serving it on a warm day or preparing it for lunch.

Why Roasting the Chickpeas Makes Such a Difference
If there's one step I wouldn't skip, it's roasting the chickpeas.
Straight from the tin they're soft and mild, but roasting changes both their texture and flavour. The outside becomes lightly crisp while the inside stays tender, and the spices become more aromatic as they cook.
The biggest improvement comes from drying the chickpeas before seasoning them. I usually spread them on a clean tea towel and gently pat them dry. They don't need to be completely dry, but removing excess moisture helps them roast rather than steam.
When buying chickpeas, any good-quality tinned variety works well. I don't notice a huge difference between brands, although chickpeas with fewer split skins tend to roast a little more evenly.
If you don't have chickpeas, canned butter beans or cannellini beans can work, although they'll stay softer and won't become quite as crisp.
One mistake I've made before is overcrowding the baking tray. If the chickpeas are piled together, they release steam and stay soft. A single layer gives much better results.

For the Shawarma Chickpeas
- Chickpeas These are the heart of the recipe. I always rinse them well to remove the canning liquid, then dry them thoroughly before seasoning. That small step helps them brown much better.
- Olive oil Just enough to help the spices coat every chickpea evenly and encourage good roasting. Extra virgin olive oil adds a little more flavour, but any everyday olive oil works.
- Ground cumin This gives the chickpeas their earthy base and provides much of the classic shawarma character.
- Smoked paprika Adds gentle smokiness and a rich colour. If you only have sweet paprika, the salad will still be lovely, just slightly milder.
- Ground turmeric Used in a small amount for warmth and colour rather than a strong turmeric flavour.
- Garlic powder I prefer garlic powder here because it coats the chickpeas evenly without burning in the oven the way fresh garlic sometimes can.
- Ground cinnamon Only a little is needed. It doesn't make the chickpeas sweet but rounds out the spice blend beautifully.
For the Lemon Tahini Dressing
- Tahini Choose a smooth, pourable tahini if possible. Natural separation is normal, so stir it well before measuring.
- Fresh lemon juice Freshly squeezed always tastes brighter than bottled juice here.
- Olive oil Adds richness and helps the dressing coat the salad evenly.
- Garlic One small clove gives plenty of flavour without overpowering the other ingredients.
- Water Added gradually until the dressing reaches your preferred consistency.
- Salt and black pepper Season to taste after everything has been mixed together because different tahini brands vary in bitterness.
For the Salad Base
- Romaine lettuce I like romaine because it stays crisp even after the dressing is added.
- Cucumber Adds cool freshness and balances the warm spices.

- Red onion Thin slices give gentle sharpness. If yours tastes particularly strong, soak it in cold water for ten minutes before adding it to the salad.

1. Prepare the oven or air fryer
Preheat your oven to 200°C (400°F). If you're using an air fryer, allow it to preheat for a couple of minutes if your model recommends it.
While it's heating, drain and rinse the chickpeas thoroughly. I always take an extra minute to pat them dry with a clean tea towel or kitchen paper. They don't need to be perfectly dry, but removing as much surface moisture as possible helps them crisp rather than steam.

2. Season the chickpeas
In a large bowl, combine the chickpeas with the olive oil, ground cumin, smoked paprika, turmeric, garlic powder, ground cinnamon, cayenne (if using) and salt.
Stir until every chickpea has a light coating of spices. If you notice a few spices collecting at the bottom of the bowl, keep tossing for another minute rather than adding extra oil.
I've found that adding more oil often makes the chickpeas less crisp.

3. Roast until golden
Spread the chickpeas onto a baking tray in a single layer.
Roast for 25 to 30 minutes, giving the tray a good shake halfway through cooking.

They're ready when they're lightly browned, feel crisp on the outside and smell wonderfully aromatic. Some chickpeas will become crunchier than others, and that's completely normal.
Air fryer method: Cook for 12 to 15 minutes, shaking the basket halfway through. If they're still slightly soft, cook for another 2 to 3 minutes until the outsides feel crisp.
Don't worry if they soften a little after leaving the oven. Once they're mixed into the salad, a slight chewiness is actually very pleasant.

4. Make the lemon tahini dressing
While the chickpeas cook, whisk together the tahini, lemon juice, olive oil, garlic, salt and pepper.
At first, the mixture will become surprisingly thick. That's exactly what should happen.
Add the water one tablespoon at a time, whisking well after each addition until you have a smooth, pourable dressing.
I usually stop when it coats the back of a spoon. If it seems too thick after standing for a few minutes, simply whisk in another splash of water.
Taste before serving. Depending on the tahini you're using, you may want another squeeze of lemon or a pinch more salt.

5. Assemble the salad
Place the romaine, cucumber, cherry tomatoes, red onion and parsley into a large serving bowl.
Toss gently so everything is evenly distributed.

6. Finish and serve
Scatter the warm roasted chickpeas over the salad.
Drizzle generously with the lemon tahini dressing just before serving.
I prefer adding only enough dressing to lightly coat everything and serving the rest at the table. It keeps the lettuce crisp and lets everyone help themselves.
The contrast between the warm chickpeas and cool vegetables is one of my favourite parts of this recipe, so I usually serve it immediately while the chickpeas are still warm.
