Rosemary maple spiced roasted nuts are irresistibly tasty. They only take 20 minutes to make and you can put them into little jars for an edible Christmas gift. All the flavours work beautifully with the crunchy candied nuts.

Spiced Roasted Nuts

There's something so irresistible about homemade roasted nuts. The huge flavours permeate the air as they roast and you can tweak all the flavours to your liking.

Nuts are lovely on their own, but roasted with herbs and spices? BOOM - crunchy amazingness. 

The only sad thing as I write this is that I don't have any left to nibble at as I type. I really must make amends to that tomorrow and whip up another batch.

Luckily, this spiced nuts recipe only take 20 minutes to make, and they're super easy.

Candied Nuts

There are some pretty incredible flavours all at work in these spiced roasted nuts. I've tweaked the recipe many times and this is my ultimate blend of sweet/savoury/umami/spicy/salty and simply mind-blowing deliciousness.

The candied nuts cool down to become crunchy little flavour bombs. 

You will need:
vegetable oil 
maple syrup
soy sauce 
rosemary
cayenne pepper 
cumin
smoked paprika
garlic powder
salt
mixed raw unsalted nuts
mixed raw unsalted seeds

Cooks Tips:

  • These nuts have just a little heat. If you like things spicy then add a little extra cayenne.
  • Use your favourite nuts - cashews, pecans, walnuts, hazelnuts etc...
  • Use any seeds you like, pumpkin, sesame, chia, flax etc...
  • These candied nuts should last for up to 2 weeks in an airtight container.
  • Make it vegan: this recipe is naturally vegan.
  • Make it gluten free: use tamari instead of soy sauce.

Roasted Nuts - a great edible Christmas gift

Spiced nuts make an awesome edible gift at Christmas. They don't take long to make and they're a decadent treat that anyone is sure to love.

Just spoon them into little jars with an extra sprig of rosemary and put on the lid and add a bow.

Anyone is sure to love them.

How to make Rosemary Maple Spiced Roasted Nuts - mix the melted coconut oil and maple syrup with the herbs and spices in a bowl
Step 1: Stir the oil, maple syrup, soy sauce, rosemary, spices and salt together in a large bowl.

Step 2: Add the nuts and seeds and mix well.

Step 3: Spread the coated nuts onto the prepared baking tray and bake for 18-20 minutes, stirring occasionally, until slightly darker and toasted.

Step 4: Leave to cool on the baking tray, stirring occasionally.

Ingredients
 

  • 2 tablespoon vegetable oil I used rapeseed oil
  • 2 tablespoon maple syrup
  • 1 tablespoon soy sauce or tamari
  • 2 teaspoon chopped fresh rosemary
  • ½ teaspoon cayenne pepper
  • ½ teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ¼ teaspoon garlic powder
  • ½ teaspoon salt
  • 400 g (3 cups) mixed raw unsalted nuts
  • 3 tablespoon mixed raw unsalted seeds

Instructions
 

  • Preheat oven to 170C/325F. Line a baking tray with baking paper.
  • Stir the oil, maple syrup, soy sauce, rosemary, spices and salt together in a large bowl. Add the nuts and seeds and mix well.
  • Spread the coated nuts onto the prepared baking tray and bake for 18-20 minutes, stirring occasionally, until slightly darker and toasted.
  • Leave to cool on the baking tray, stirring occasionally, then store in an airtight jar for up to two weeks.

    Based on the images, it looks like you use fresh rosemary. Is that the case?

    Drives me crazy when people rate a recipe without actually trying it first - here's a 5 star review after making it. The nuts are really tasty and crunchy. I used almonds, cashews and macadamia nuts with pumpkin, sunflower and sesame seeds. Yummy.
