Stir it together, bring it to a boil, then reduce the heat and simmer for 10 minutes.
Allow the mixture to cool slightly. Place a fine-mesh strainer over a bowl or jug and pour in the mixture. Lightly press the kiwis into the strainer to extract the juice, but don't press too hard or your syrup could have 'kiwi bits' in it.
Allow the mixture to cool, then pour it into a jar or bottle and keep it in the fridge for up to 1 week.

- Gently press the kiwi chunks against the strainer while extracting the syrup to ensure you get the maximum amount of flavor, but don't press too hard or small pieces will get into the syrup. If necessary strain it again.
- Feel free to double or halve the recipe depending on your needs. Just ensure the ratio of ingredients remains consistent.
