Dhal is a great midweek meal or alternative homemade Indian curry.
It's also freezer-friendly and has less than 300 calories per portion.
As soon as my family mentions wanting a curry, I know exactly what I'll be having - dal. There are lots of types of dal, made with various pulses, but I love using red lentils - they're quick to cook. and you don't need to soak them!
I've tweaked and changed this restaurant-style dahl recipe over the years and I've finally settled on this combination as my absolute favourite.
It's comfort food at it's finest.
I always make a big batch and keep a stash of this vegan lentil curry in the freezer for super-quick midweek meals that the whole family loves.
I love to serve this red lentil curry with rice or my super easy naan bread recipe (just 4 ingredients and 15 minutes for homemade naan bread, plus it's yeast-free and easily vegan or gluten free).
It's also amazing with Bombay Potatoes.

Protein-packed red lentils cook quickly so this dal is ready in under half an hour.
Add more chilli if you like the heat, or more coconut milk if you want it extra creamy.
What is Daal?
Dhal, also called dahl, dal, or daal, refers to either dried split lentils or dried split peas as an ingredient (that don't require soaking or pre-cooking) or as a spiced curry from the Indian subcontinent made with split peas or lentils cooked until softened and thick.
Dhal is a very popular staple dish served widely across India. As with most traditional meals, the exact methods and ingredients vary from region to region and household to household.
A lentil dahl doesn't always have tomatoes in it, but adding them means the acidity from the tomatoes cuts through the coconut milk so it has more depth of flavour rather than sweetness.
Expert Tips
Do I use dried red lentils? Yes. No need to pre-cook them (just give them a rinse), they'll cook in the curry.
If you have more time, let the onions cook longer in the pan for a more fragrant dahl.
Do the red lentils need to be pre-soaked? No, just add them dry! Though you'll want to rinse them first.
If you don't have all the spices, just add 3 teaspoon of Garam Masala (an easy-to-find dried Indian spice blend that's in most grocery stores).
Serving Suggestions
How to serve this Indian dhal? Serve it as a lentil curry with rice and/or naan bread, or as a side dish alongside another curry or Bombay aloo.
Try this served with my baked vegetable pakora or turmeric roasted cauliflower.
Try it with a few other curries for a party or gathering.

This dahl is really easy to make. If you can spare a bit more time, then I'd suggest you slowly cook the onions for about 10 minutes until soft but not too brown. Then also simmer the dahl a little longer.
But if you don't have time then the dahl also great with the method below! (I usually make it the quicker way!)
1: Cook the onions in the oil until soft, then add the garlic and chilli (fresh finely diced chilli or dried chilli flakes).
2: Lightly grind the cumin seeds, mustard seeds and coriander seeds in a mortar and pestle.
3: Add the ground spices, as well as garam masala and turmeric to the pan, stir and cook for 1 minute.
4: Add the stock/broth, canned tomatoes, dry red lentils and coconut milk, stir well and simmer.
5: Simmer until thick, about 15-20 minutes.
6: Add the spinach and lemon juice. Stir to wilt the spinach. Serve the dal recipe!

The Best Red Lentil Dahl
Equipment
- Saute pan or large frying pan
- Pestle and Mortar or spice grinder

Ingredients
- 1 teaspoon olive oil or coconut oil
- 2 onions diced
- 3 garlic cloves finely chopped
- 1 tablespoon fresh ginger peeled and grated
- ½ finely chopped red chilli (or ½ teaspoon dried chilli flakes)
- ½ teaspoon cumin seeds
- ½ teaspoon coriander seeds
- ½ teaspoon mustard seeds
- 2 teaspoon ground turmeric
- 1 teaspoon garam masala TIP: If you don't have all the whole spices, just use 3 teaspoons of Garam Masala instead.
- 1 cup (200g) dried red lentils, uncooked (rinsed and drained)
- 1 can (14oz/400ml) chopped tomatoes
- 1 can (14oz/400ml) coconut milk
- 2 cups (500ml) vegetable broth/stock
- Salt and pepper
- Juice of half a lemon
- 2 handfuls fresh spinach washed
Instructions
Stove Top Daal
- Heat the oil in a large pan over a medium heat. Add the onion and cook gently for 5 minutes. Add the garlic, ginger and red chilli and cook for a few minutes.
- Grind the cumin, coriander and mustard seeds lightly in a pestle and mortar, then add to the pan, along with the turmeric and garam masala and cook for 1 minute.
- Add the lentils, tomatoes with their juice, coconut milk and broth/stock, then stir to combine. Season with salt and pepper and cook on a medium/low heat for 15-20 minutes until reduced and thick. If you have time, you can leave it a little longer on a very low heat for even more flavor (just stir often and check it doesn't scorch on the bottom of the pan).
Taste and add more chilli if desired. - Stir in the lemon juice and spinach until it wilts.
- Serve warm with rice, naan bread or poppadoms.
Instant Pot Lentil Dhal
- Set the Instant Pot to 'saute' setting and heat the oil. Add the onion and cook, stirring, for about 4 minutes until it gets soft but not browned. Add the garlic, ginger and red chilli and cook for a minute, then turn off the Instant Pot.
- Grind the cumin, coriander and mustard seeds lightly in a pestle and mortar, then add to the pan, along with the turmeric and garam masala and cook, stirring, for 1 minute (there will be enough heat left in the Instant Pot to do this).
- Stir in the lentils, tomatoes, coconut milk and broth/stock. Put the lid on the Instant Pot, close the steam vent and set to Manual (Pressure Cook)/High Pressure pressure using the manual setting, then set the time to 8 minutes.
- After the time is up, wait for 10 minutes and then carefully use the quick release valve to release remaining pressure, or let the pressure release naturally. Stir in the lemon juice and the spinach until it wilts and serve!
Slow Cooker Daal
- Heat the oil in a frying pan over a medium heat. Add the onion and cook gently for 5 minutes. Add the garlic, ginger and red chilli and cook for a few minutes.
- Grind the cumin, coriander and mustard seeds lightly in a pestle and mortar, then add to the frying pan, along with the turmeric and garam masala and cook for 1 minute.
- Add the onion mixture to the bowl of the slow cooker, along with the lentils, tomatoes, coconut milk and broth/stock. Place lid on slow cooker and cook on high for 4-5 hours or low for 8-10 hours.Taste and cook longer if necessary for the lentils to be lovely and soft. Season with salt and pepper and stir in the lemon juice and spinach.

Just wanted to thank you for this recipe. I've been making it for a few years now and it's a winter staple in our house. I've found that when I don't have fresh ginger, ground ginger works as a good substitute - so it can basically work as a store cupboard recipe too. I doubled the garlic quantity (6 in total) because I always add more garlic than recipes state, and I did omit spinich because I did not have any (I have used it when I've made it previously but don't feel it's a necessary addition). Recipe calls for 2 teaspoons tumeric. I used 1.5 teaspoons, it was too much. Recipe called for two onions. I used one onion and it was too much. Other than those adjustments, it was good. I would substitute tomato sauce for the diced tomatoes, just my preference.

It’s end of week fridge clean out. I chopped a heap of vegetables to stop going into land fill and added to the Dahl. Made as per recipe but did add another half cup of lentils. I thought it was about time I left a comment as this has been a staple in our household for about 3 years now! It's absolutely AMAZING and everyone I've ever made it for begs me for the recipe and it's always the first answer to 'what do you want for tea tonight?!'
I've adapted the recipe throughout the years and often roast anything from sweet potato, butter nut squash, red, yellow and orange bell peppers in the over first before adding at the end of the cooking time. I also usually add a tin of chickpeas (or any beans I have in the cupboard) to bulk it up a bit and make it last longer! (It doesn't last longer...it's so delicious that we just end up eating more!) I also favour lime juice instead of lemon but it's all personal preference and such a great dish to use up what's in the cupboards and any veggies in the fridge/freezer. Hi Yolanda, either is fine. I often freeze leftovers that have the lemon juice already added and it works fine. You can always add a squeeze of lemon after reheating if you want, to taste.

Simple and delicious. I haven’t made dahl with cocunut milk or tomato before but it really worked. I substituted curry powder for the suggested gara masala for curry powder. I did the easy 3tsp of garam masala version. Really easy, unbelievably delicious. First time took longer to thcken -still delicious. Second time did 11/2 cups of lentils so was thicker. Can't believe how good this tastes. Wish I'd found it years ago. I'm probably going to live off this for a couple of weeks (or until it comes out of my ears). The naan bread is really easy too. Do try this. I can't recommend it highly enogh. Oh, and I am rubbish in the kitchen - just followed the instructions.

Hi, all the red lentils I ever use cook quickly. Brown or green lentils take longer. If your red lentils are still hard, just simmer the dhal for longer until they're lovely and soft.

Ummm. This was such a nice dish. The flavors were so perfectly balanced! This is now in my arsenal of "go to" recipes!
I didn't have mustard seed so I used mustard powder (less than the amount seeds called for). Otherwise I followed the recipe exactly. It was perfection.
I did the fast version but let it simmer as we are and cleaned up dinner. Now all of those flavors have mingled and I can't help have a taste or two as I portion it off for fast freezer food.
PS. My 7, 6, and 2 year olds all gobbled it up too.

This is the best dal recipe I've ever used. It is delicious. I followed the recipe, which is pretty much a first, but added some methi leaves, just because I like them and I could. We're omnivores, so it was a side dish, but it would certainly work as a main course. I'm glad I made more than needed because I've a stash in the freezer now. I would say it is spelled 'daal,' which simply is the Hindi word for lentil. They have their own writing system and there are indeed letters which are transcribed using an h, but this is not the case here. So d rather than dh. And it is long a (often transcribed as aa) rather than short a. So 'daal,' which beautifully reads दाल in their script. But I guess this is not the place to discuss linguistics 😉 and I won't blame anyone for writing it as they please.

The best Dahl recipe we've ever tried! We have made many, over the years, but the spice combo in this one is perfect. My kids ask for it! I add in whatever vegetables we have laying around (today was courgettes, carrots, potatoes and peas) while sauteéing but after the onions, garlic ginger and spices. I love this Dahl! And so does everyone in my family, from the meat-lovers, to the vegetarians and the kids! I go a little easy on the hot pepper flakes, and omit the coconut milk (not everyone is a fan). Based on other recipes I saw, I cook the lentils separately for 20 minutes, in stock and some of the tomato juice from the can. I start the onions in olive oil, but after adding all of the spices I add a tablespoon of coconut oil. It seems to give just enough coconut fragrance without overpowering the other flavours. I’ve also served with chunks of feta to rave reviews. Thank you for introducing us to Dahl, it’s a new-found favourite!

I’ve made this recipe so often I don’t need to look at it anymore! It’s a firm favourite of ours. I normally do a big bath and we have it for lunch during the week. The comments on this recipe sound a little too good to be true, it's just another dahl, right? Wrong. It's the best damn dahl you'll ever eat. The best. Trust me. After just one mouthful my partner turned to me and asked if we could add this into our regular rotation.
I even cheated a little using what I had on hand, substituting ground spices when whole seeds were called for. Still amazingly delicious.

Have made this a couple of times now and it’s very quick and easy and absolutely delicious. I ‘tweaked’ it slightly by roasting some cauliflower, carrots and butternut squash in the oven and added in once the dhal was cooked.
I served topped with a drizzle of oatly creme fraiche, toasted almonds and freshly chopped coriander. A roti and caramalized carrot chutney to accompany. Delicious.

i have made a number of dhals searching for that elusive something - and this just about hits the spot! i made a few adaptions - i added more spices particularly cumin,more chilli and curry leaves and less coconut milk - and i lov it !!!!!

This is very similar to my dal so I know how good it tastes. We have it most weeks, just with some toasted wholemeal pitta bread. Such a comforting dish and my wee boy loves it.

I've never tried this recipe with anything other than canned coconut milk. I like the flavour the coconut milk gives to the recipe and it's thicker than rice or soy milk. I'd be tempted to wait and get a can of coconut milk, but if you try it with rice or soy milk please let me know if it works 🙂

I have done similarly with soya milk and it does work well. I put a little coconut oil over the rice and fry the onions in it too. You get the flavour with few calories.

Do you soak your lentils before rinsing/draining them? as I know if not they absorb a lot of liquid...
