Vegan Cinnamon Ice Cream

You'll love this healthy Vegan Cinnamon Ice Cream! It's easy to make with whipped frozen bananas and warming ground cinnamon.

I've served this delicious Vegan Cinnamon Ice Cream with.... maple roasted radishes!

Trust me, it really works.

The peppery radishes taste divine roasted with sweet maple syrup. 

Super-healthy vegan banana ice cream with a warm pinch of cinnamon, topped with sliced radishes drizzled with maple syrup and roasted. They get sweeter, milder and absolutely magical.

How about fresh radishes dipped in butter and salt and eaten in the garden on a warm day?

The dark pink, the white crispy interior, pinching off the little root tail between thumb and forefinger.

A peppery, salty, buttery snack that evokes freshness and lazy pleasure. Sometimes there is true beauty in simplicity: the children laughing together, a perfectly crafted final sentence in a beloved book, a phone call with words of love. Radishes.

But what else to do with radishes? Dessert. Ice cream.

This dessert couldn't be easier to make.

Which is good because life is rather hectic at the moment.

There are goodbyes to be said. Too many. Promises of staying in touch. Too few hellos. There are boxes to pack and memories to wrap. Cupboards to clean and papers to sign. There is much worrying to be done. Excitement to be had.

So I leave you with a simple dessert. A healthy, sugar-free, gluten-free, vegan dessert. A portion of fruit, a portion of veg, a portion of magic.

Ingredients
 

For the radishes:

  • 5 radishes
  • 1 teaspoon olive oil
  • 1 teaspoon maple syrup

For the ice cream

  • 3 bananas frozen
  • 1 teaspoon ground cinnamon

Instructions
 

For the radishes

  • Preheat oven to 200C/400F.
  • Slice the radishes and toss in an oven-proof dish with the oil and maple syrup. Bake for 12-15 minutes or until they begin to brown.

For the ice cream

  • Whiz the bananas and cinnamon in a blender or food processor until it creates a whippy consistency. Top with the roasted radishes and serve immediately.

    Hi! Crazy question maybe...after you blend/whip the frozen bananas, can you scoop them into serving dishes and put them back in the freezer? Just wondering if doing this allows you a make in advance without compromising the dish. I'm trying this out tomorrow and I can't wait! Sounds so darned good.

    Thank you for the lovely idea on how to prepare radishes. I wasn't doing the whole ice cream thing, just the radishes (though come summer I'll try them as ice cream accompaniment for sure).
    I've struggled with radishes my whole life, not being able to enjoy them at all because of their intensity of flavor, but the roasting really does something to them and they become mellow.
    I had honey, and also used ghee for its mildness of flavour.
    Btw, the thinner ones crisped up, came out like chips! Yummy!
