Today's recipe is for delicious, refreshing, creamy avocado and lime ice lollies - they have just a hint of lime.
This can be made with any milk you like, skimmed or whole cow's milk, make it vegan with rice, soya, or my personal favourite, almond milk.
The weather may have taken a turn for the worse of late (snow in the UK in May??), but in my head it's summertime. That means BBQs, white wine and frozen treats/ice lollies/icy poles/popsicles - whatever you call them.
My vegetable drawer doth runeth over at the moment, and in it I have some particularly ripe and perfect avocados.
Every morning so far this week I've started the day with delicious mashed avocado on toasted homemade herb bread and a mug of Earl Grey tea.

Lime Avocado Popsicles
Ingredients
- 1 avocado flesh only
- ½ cup (125ml) milk (cows, almond, soya - you choose)
- Juice of 1 lime
- 2 tbsp maple syrup
- ½ tsp vanilla extract optional
Instructions
- Blend all ingredients, pour into popsicle molds, freeze and enjoy!

I didn't have lime, so made these with lemon + replaced sugar with honey..turned out perfect! 🙂
