Try this easy Mexican Sweet Potato and Black Bean Bake with smoky chipotle paste, peppers, sweetcorn, avocado, lime and melted cheddar.

Mexican Sweet Potato and Black Bean Bake is a vegetable tray bake dinner built around one of my favourite combinations: sweet potato, smoky chilli and lime.

The sweet potatoes become soft and almost creamy inside while their corners catch against the hot baking tray. Black beans bring a more substantial texture, sweetcorn adds little pops of sweetness, and the tomatoes soften just enough to release some juice without turning the whole tray watery.

Chipotle paste is particularly good here because its smoky character balances the natural sweetness of the potatoes. Cumin gives the seasoning a warmer, earthy background without competing with it.

The toppings matter more than they might appear. Cool avocado softens the chilli heat, coriander brings freshness, and lime cuts through both the sweet potato and cheese. Greek yoghurt gives you a cool, tangy contrast in each mouthful.

I use a fairly hot oven because sweet potatoes brown better when they roast quickly rather than slowly steaming in their own moisture. The size of the roasting tray matters too. If the cubes are sitting on top of one another, they'll soften but won't develop the browned edges that make this dish much more interesting. You'll likely need two baking sheets.

This meal is especially useful on busy evenings because most of the cooking time is hands-off.

It's also easy to adjust according to what's in the fridge. Courgettes (zucchini), red onion and different peppers all work, although vegetables containing lots of water are best added towards the end.

Why You'll Love This Recipe

  • It's genuinely useful on busy evenings. Most of the 40-minute cooking time happens in the oven, leaving only the toppings to prepare.
  • There's plenty of texture. You get soft-centred roasted potatoes, tender beans, juicy tomatoes, sweetcorn and cool avocado rather than one uniformly soft bake.
  • The chilli is adjustable. Starting with less chipotle makes it easy to keep the dish mild or increase the smoky heat.
  • It makes a satisfying vegetarian main. Black beans, cheese and yoghurt make the vegetables feel like a complete meal rather than a side dish.
  • It adapts well. Different vegetables, cheeses, beans and toppings can be used without changing the basic roasting method.
  • The finishing ingredients have a purpose. Lime, coriander and yoghurt balance the sweetness, smoke and richness instead of simply decorating the plate.
  • It suits meal prep. The roasted mixture reheats well, provided the avocado and cold toppings are stored separately.

Chipotle Paste

Chipotle paste does much of the heavy lifting in this recipe. Chipotles are smoked, dried jalapeño chillies, so they bring smoke and chilli heat at the same time.

I prefer paste here because it coats the sweet potato easily. Mix it thoroughly with the olive oil before roasting so you don't end up with one fiercely hot cube and several barely seasoned ones.

When buying chipotle paste, check the ingredients and heat indication if the jar provides one. Some are considerably hotter, sweeter or more tomato-heavy than others. I normally start conservatively because adding extra at the table is easier than rescuing potatoes that are too hot. (Tip: I like to stir a little chipotle paste in to a small dish of Greek yogurt as a mildly smoky spicy dip or drizzle).

Chipotle flakes or powder can substitute, although I'd use less initially because dried chilli can be quite concentrated. Smoked paprika is a useful mild alternative if you're cooking for someone who doesn't enjoy chilli, although you'll lose the characteristic chipotle heat.

Ingredients

  • Sweet Potatoes - These form the base of the bake. Choose firm potatoes without soft patches and cut them into similarly sized cubes so they finish cooking together. I aim for roughly bite-sized pieces rather than very small dice, which can become too soft.
  • Cherry Tomatoes - They provide acidity and enough juice to bring the roasted ingredients together. Leave smaller tomatoes whole and halve unusually large ones if necessary.
  • Red Peppers - Their sweetness suits chipotle particularly well. Orange or yellow peppers work equally well, while green peppers give the bake a slightly sharper flavour.
  • Black Beans - These make the dish more substantial and bring an earthy flavour that sits naturally with cumin and chilli. Drain and rinse canned beans well, then let excess water drip away before adding them.
  • Sweetcorn - Frozen and canned sweetcorn both work. If using canned corn, drain it thoroughly. There's no need to defrost frozen kernels first.
  • Avocados - Add these after cooking. Look for fruit that gives slightly when gently pressed but isn't very soft.
  • Cheddar Cheese - A mature Cheddar gives better flavour without needing an excessive amount.
  • Olive Oil - This helps the potatoes brown and carries the chipotle and cumin over their surface. A standard cooking olive oil is fine.
  • Limes - Fresh lime juice provides the acidity this bake needs. I usually serve extra wedges because people tend to want more than they expect.
  • Chipotle Paste - This provides the chilli and smoky character. Adjust the amount according to the particular paste you're using.
  • Ground Cumin - Its warm, earthy flavour ties the beans and sweet potatoes together. Ground coriander can be added alongside it, but I wouldn't replace the cumin entirely.
  • Fresh Coriander - Scatter it over just before serving so it stays fresh. If you dislike coriander, flat-leaf parsley is a different but perfectly workable alternative.
  • Greek Yoghurt - A spoonful cools the chilli and adds tang. Natural yoghurt, soured cream or a thick dairy-free yoghurt can take its place.

Instructions

Heat the oven to 220°C/200°C fan. A properly hot oven is important here. If the potatoes go into an oven that's still warming up, they tend to soften before their edges have a chance to brown.

Season the sweet potatoes. Put the cubed potatoes in a large bowl and toss with the olive oil, chipotle paste and cumin. Keep mixing until the seasoning looks evenly distributed. If some pieces appear dry, keep tossing before automatically adding more oil.

Spread them out. Transfer the potatoes to a large baking tray, preferably in a single layer. Use two trays if necessary. Space is more useful than a deeper coating of oil because escaping steam is what allows the surfaces to roast.

Roast for about 25 minutes. Turn the cubes once during cooking. At this point they should be beginning to soften when pierced with a knife and showing brown patches around the edges. Very large cubes may need another five minutes before you add anything else.

Add the vegetables and beans. Scatter in the peppers, drained black beans, sweetcorn and cherry tomatoes. Stir gently so they're coated in some of the seasoned oil without crushing the tomatoes.

Return the tray to the oven for around 10 minutes. You're looking for hot beans, slightly softened peppers and tomatoes that are beginning to wrinkle or split.

Add the finishing ingredients. Spoon into bowls or serve directly from the tray, then add sliced avocado, grated Cheddar and coriander. Squeeze lime generously over everything and serve Greek yoghurt alongside. I add the cheese while the potatoes are still hot so it softens slightly without disappearing into an oily melted layer.

Serving Suggestions

I often serve this straight from the roasting tray with lime wedges and yoghurt for an uncomplicated dinner. It's also good spooned into warm tortillas, served alongside a crunchy cabbage slaw (or Kohlrabi Slaw), or paired with a simple green salad when you want something lighter.

For lunch, divide the roasted mixture between containers and pack the avocado, yoghurt and lime separately.

At a barbecue, it makes a useful vegetarian side alongside grilled vegetables or corn. For picnics, I prefer serving it at cool room temperature without the yoghurt until needed.

You can also serve it over brown rice, quinoa or coriander-lime rice when feeding hungrier people.

Tortilla chips add crunch, while pickled red onions provide a particularly good acidic contrast.

For drinks, sparkling water with plenty of lime works nicely. A cold lager also suits the smoky chilli if you're serving the bake as part of a relaxed evening meal. Or try Rose Lemonade or Easy Matcha Horchata.

Variations

For a vegan version, leave out the Cheddar and Greek yoghurt and use a thick unsweetened plant-based yoghurt. For dairy-free, make the same substitutions.

The recipe is naturally gluten-free if the packaged ingredients, particularly the chipotle paste, are certified or confirmed gluten-free where required.

For higher protein, increase the black beans or add cooked tofu.

Try pinto or kidney beans instead of black beans for a slightly different texture. Crumbled feta gives a saltier, sharper finish, while Monterey Jack melts more softly than Cheddar.

Add courgette during the final roasting stage for a summer version, or roast butternut squash alongside the sweet potato in autumn. Red onion is also excellent, although I add it from the beginning if cut into thick wedges.

For different herbs, replace coriander with parsley or add sliced spring onions. A lime and yoghurt dressing makes the bake creamier, while a coriander-lime dressing keeps it fresher and sharper.

Storage

Store: The cooked sweet potato, bean and vegetable mixture keeps in an airtight container in the fridge for around three days. Store avocado, coriander, yoghurt and fresh lime separately because they're much better added after reheating.

Reheat: I reheat leftovers in the oven or air fryer when I want to restore some of the roasted texture. A microwave is quicker, although the potatoes become softer. A fresh squeeze of lime afterwards wakes everything up surprisingly well.

Freeze: You can freeze the roasted sweet potato and bean mixture, but I wouldn't freeze the avocado, yoghurt or fresh toppings. The potatoes become softer after thawing, so frozen leftovers are especially good repurposed in wraps, quesadillas or bowls where crispness matters less.

Meal Prep: For meal prep, roast everything in advance and portion it once cool. Slice the avocado just before eating.

  • Start cautiously with chipotle. You can add a little extra paste to the yoghurt if the finished bake needs more heat.
  • Use lime generously. If the finished dish seems heavy or overly sweet, it usually needs acidity rather than more salt.
  • Add avocado at the last moment. Heat quickly makes it softer and duller in colour.
  • Check the potatoes before adding the vegetables. Cooking times vary with cube size, so tenderness is more reliable than the clock.

FAQ

Can I make sweet potato and black bean bake ahead of time?

Yes. Roast the sweet potato, beans and vegetables, cool them and refrigerate in a sealed container. Reheat before adding avocado, coriander, lime, cheese and yoghurt.

Do I need to boil sweet potatoes before roasting them?

No. Small cubes cook comfortably in the hot oven without parboiling. Boiling them first can actually make them fragile when you stir in the other ingredients.

Can I use dried black beans?

Yes, but cook them fully first. This recipe's final ten minutes of roasting only heats the beans and won't cook dried beans from scratch.

What can I use instead of chipotle paste?

Chipotle powder or flakes work well in smaller quantities. For a mild version, use smoked paprika with a pinch of ordinary chilli powder if desired.

Why aren't my sweet potatoes crispy?

Crowding is usually the reason. Sweet potatoes also contain plenty of moisture, so expect browned, caramelised edges rather than the brittle crispness of a fried potato. A large hot tray and enough space produce the best result.

Ingredients
 

  • 1 kg sweet potatoes peeled and cubed
  • 2 tablespoons olive oil
  • 3 teaspoons chipotle paste
  • 2 teaspoons ground cumin
  • 2 red peppers chopped
  • 400 g can black beans drained and rinsed
  • 200 g sweetcorn frozen or canned
  • 300 g cherry tomatoes
  • 2 avocados
  • 2 limes
  • Handful coriander chopped
  • 100 g grated cheddar cheese
  • Greek yoghurt to serve

Instructions
 

  • Heat the oven to 220°C/430°F.
  • Toss the sweet potatoes with the olive oil, chipotle paste and ground cumin and spread out on a baking sheet (or two so they aren't too crowded).
  • Roast for 25 minutes, turning once.
  • Stir in the peppers, black beans, sweetcorn and tomatoes.
