These delicious 3 ingredient Yogurt and Blueberry Popsicles are super easy to make! Sweet blueberry sauce is layered with creamy yogurt. It's an easy, dreamy summer popsicle recipe.

Hands up if you're a massive blueberry fan. Me too! I absolutely adore them. Little balls of deliciousness.

Here, I've turned my favorite fruit into creamy, delicious Blueberry Popsicles.

The sweet blueberries work beautifully with frozen yogurt in these simple fruit pops.

They're the perfect way to cool down with a frozen dessert on a warm summer evening.

Popsicles

I adore popsicles in the summer (and year round really, for that matter!). Whether you call them icy poles, ice pops, ice lollies or pops, you've got to admit that they're pretty awesome.

They're so easy to make and endlessly customizable. They're also a great way to use up fresh fruit.

Ingredients

You only need 3 simple ingredients for these easy Blueberry Popsicles!

Blueberries - you can use fresh or frozen.

Sugar - just a little to sweeten the blueberries. You could substitute for maple syrup, agave, coconut sugar or your sweetener of choice.

Yogurt - Use your favorite variety, though a sweetened one works best. I love these with vanilla or lemon yogurt. If using plain, try with a little maple syrup swirled in to sweeten it.

Blueberry sauce

You could simply whiz the blueberries in a blender, but I don't like how the skins leave 'bits' in the popsicles. It's sort of at odds with the creamy yogurt.

So, these one have a super-simple blueberry sauce that you can make in minutes. The results are smooth, decadent and delicious fruit pops! It only takes a few minutes and tastes incredible!

Step by step tutorial

This recipe is SO EASY!

Simply heat the blueberries and sugar with a splash of water for 10 minutes until it turns into a thick sauce. Let it cool and layer with yogurt!

Follow these easy steps, then scroll down to the recipe card for the full ingredients list and method.

Add the blueberries, sugar and water to a pot and heat, stirring occasionally, for 8 minutes until it becomes a thick sauce. Allow to cool completely.

Layer the yogurt and cooled blueberries alternating in a popsicle mold. Freeze until solid.

Tips

Change the flavor of the pops by using different yogurt! Vanilla, strawberry, honey, lemon etc.. are all perfect.

If using plain yogurt, try swirling a little maple syrup in to sweeten it.

If using lemon yogurt, try adding 1 tablespoon lemon juice to the blueberries to bring out the flavor.

Try these blueberry popsicles with different fruit instead. Blackberries, cherries, raspberries... delicious!

  • 2 cups (400g) blueberries fresh or frozen
  • 2 tablespoon sugar
  • 2 tablespoon water
  • 3 cups (750g) yogurt

Instructions
 

  • Add the blueberries, sugar and water to a pot and heat for 8 minutes, stirring often, until it becomes a thick sauce. Allow to cool completely.
  • Spoon the yogurt and blueberries, alternating, into popsicle molds and freeze until solid.
