This mango salad is zingy, refreshing and super tasty! Mango, avocado and lettuce are piled high, then drizzled with a zingy lime ginger dressing. It’s easy, bursting with flavour and ready in minutes!
Seasonal mangoes are an absolute joy. I always end up getting loads and using them in all sorts of recipes, like this delicious mango salad, or mango compote (perfect on yogurt, pancakes, oats etc…).
Green salads can be a little dull – but not this one! It is absolutely bursting with taste! I used mixed leaves for a variety of flavours and textures, then topped it with chunks of fresh, juicy mango and slices of creamy avocado. Some chopped mint and black sesame seeds add a little extra WOW. The dressing is a quick and vibrant Lime Ginger Dressing. It only takes seconds to make, but really lifts the salad with zingy flavour.
Green Salad with Mango and Avocado
Don’t get me wrong, I do love a green salad. But I always see it as the basis, or bottom layer, to a variety of fruits, veggies, herbs and other goodies.
There’s nothing worse than being served a plate of iceberg lettuce (we’ve all been there, right veggies and vegans?). Especially when it takes very little effort to really jazz up a green salad.
I love the way the mango brings juicy sweetness to this salad, while the avocado brings a mild creaminess. They both compliment the leaves beautifully.
Lime and Ginger Dressing
This is a really tasty dressing, that only takes seconds to prepare! You will need:
- Extra virgin olive oil
- Maple syrup
- Fresh ginger
- Lime juice
- Salt and pepper
It couldn’t be easier to make the dressing. Simply mix all the ingredients together, then keep in the fridge and drizzle over the plated up salad!
Tip: as with most salads, don’t put the dressing on until just before eating or it could go a little soggy.
Then for the salad, you’ll need:
- Lettuce leaves (I like a mix of bitter, sweet, and crunchy leaves)
- Mango chunks
- Mint leaves (optional)
- Black sesame seeds (optional)

Mango Salad with Lime Ginger Dressing
For the lime ginger dressing
- 2 tbsp olive oil
- 1 tbsp maple syrup
- 2 tsp grated fresh ginger peeled
- Juice of ½ a lime
- Salt and pepper
- 4 cups (250g) mixed lettuce leaves
- 1 mango flesh cut into cubes
- 1 avocado flesh sliced
- 1 tbsp chopped fresh mint
- 1 tbsp black sesame seeds
- Wedges of lime
- Whisk the oil, syrup, ginger, lime and salt and pepper together.
- Put handfuls of the lettuce onto plates, then add chunks of mango and slices of avocado. Drizzle with the dressing and sprinkle with mint, sesame seeds and garnish with a wedge of lime.
- Best enjoyed immediately. If making ahead, don’t drizzle with the dressing until ready to eat.
