Tinned tomatoes form the basis of many curries and stews, casseroles and soups. They’re my go-to on my vegan grocery shopping list.

Make the most of the season’s bounty by canning your own tomatoes.
Then you can use them year-round in these recipes!
If there are other ingredients that you’ve can’t get or don’t have, here are my tips for substitutions:
Garlic – if you don’t have fresh, use a little garlic powder or jarred garlic paste (often in Asian section of grocery stores).
Onions – for many recipes, you can leave out the onions that are cooked in oil at the beginning. You could also use frozen onions or add some onion powder.
Spinach – try using frozen or canned in some recipes.
Vegetables – if you don’t have fresh, try frozen vegetables or substitute what you do have. Try to stick to roots for roots, leaves for leaves (ie: swap carrots for parsnips or kale for spinach)
