Pantry substitutions
If there are other ingredients that you've can't get or don't have, here are my tips for substitutions:
Garlic - if you don't have fresh, use a little garlic powder or jarred garlic paste (often in Asian section of grocery stores).
Onions - for many recipes, you can leave out the onions that are cooked in oil at the beginning. You could also use frozen onions or add some onion powder.
Spinach - try using frozen or canned in some recipes.
Vegetables - if you don't have fresh, try frozen vegetables or substitute what you do have. Try to stick to roots for roots, leaves for leaves (ie: swap carrots for parsnips or kale for spinach)
