    These easy Zucchini Chips with a panko breadcrumb coating are tender inside and crispy outside! You only need 6 ingredients and 20 minutes for this tasty snack, party food, or side dish. Make them in the air fryer or oven baked.

    Looking for a delicious and easy vegetarian snack or fun party food? Look no further than these delicious Zucchini Chips!

    Slices of zucchini (courgette) have a seasoned breadcrumb coating, then they're cooked until crispy outside and beautifully tender inside.

    You can make them in the air fryer or oven baked (both methods are given below).

    This easy-to-follow recipe takes only 20 minutes to make, and the ingredients are simple and easy to find.

    They're quick, easy and make a great snack or side dish. I love making a big batch for a game day party, and serving them up with a selection of dips.

    Plus, with their savory flavor, these bites are sure to be a hit with everyone! So, let's get started and make some Zucchini Bites!

    Bring a batch of zucchini chips to a party, along with breaded Artichoke Hearts, Air Fryer Potato Skins and some dips. I love them with French Onion Dip, Buffalo Cauliflower Dip, or Sriracha Aioli.

    Ingredients

    • Zucchini - You need 2 medium-sized zucchini (courgettes).
    • Panko Breadcrumbs - Use Italian seasoned panko breadcrumbs or plain. Panko gets them extra crispy wiht a great texture compared to regular dried breadcrumbs.
    • Flour - regular all-purpose flour is used to coat the sliced zucchini.
    • Egg - Egg in the batter helps to stick to the zucchini.
    • Milk - I use whole milk, but 2% or 1% (skim) works well too.
    • Paprika and salt - For a great flavor and seasoning in the crispy coating.

    Instructions

    Sliced zucchini, plus them tossed in flour.

    Wash the zucchini and cut it into ⅓-inch thick slices.

    Add the flour to a ziploc bag or large bowl, then add the zucchini slices and toss to coat.

    Beat the egg in a bowl, then briefly whisk in the flour, milk, paprika, and salt until you have a smooth batter.

    Place the panko breadcrumbs in a bowl.

    Dip the floured zucchini slices into the wet batter to fully coat them, then dip both sides into the breadcrumbs until fully covered.

    To cook in the air fryer:

    Place the coated zucchini bites in the air fryer basket in a single layer (cook in batches if necessary), spray with a little oil, and air fry at 400°F/200°C for 5-7 minutes on one side until golden. Flip them over with tongs, then spray with a little oil and cook for a further 5 minutes or until golden.

    To oven bake:

    Preheat the oven to 425°F and line a baking sheet with parchment paper.

    Place the prepared zucchini bites onto the baking sheet and bake in the oven for 10-12 minutes or until golden, then flip them over and bake for a further 10 minutes or until golden. The exact time will depend on how thick your zucchini are sliced.

    Serving Suggestions

    • Add 1 teaspoon of Italian seasoning, Dill Seasoning, or Ranch seasoning to the batter or breadcrumbs for extra flavor.
    • Try adding 1 teaspoon of one of these spice blends for a different flavor: Shawarma Seasoning, Old Bay Seasoning, Everything Bagel Seasoning, or Baharat Spice Blend.

    Storage

    Store: Store your zucchini chips in an airtight container in the refrigerator for up to 3 days.

    Reheat: Reheat them in the air fryer at 400°F/200C for a 5minutes, the oven (375°F for 7-10 minutes), or pan fry in a little oil for 5-7 minutes, turning once. Whichever method you use, ensure they're warmed all the way through.

    Freeze: This recipe is not suitable for home freezing, since the texture will change.

      These were so good! I'm trying to teach my daughter about making healthier choices, and she loved these in place of french fries. We cooked them in the air fryer and only used a tiny bit of spray oil.
