Vegetable Classifications

A few notes before we launch into the list of vegetables that start with E

There are some vegetables that we think of as fruits and some fruits that we think of as vegetables.

There are 3 classifications of "Vegetable": culinary, botanical, and legal.

Culinary Vegetables: These are edible plants and plant parts that are considered veggies for cooking purposes. They are usually savory or are put into savory dishes. This includes pumpkins, eggplant, tomatoes and bell peppers, which are, botanically speaking, fruits. This list of 'E' vegetable names will focus on culinary veggies.

Botanical Vegetables: Botany is the study of plants. Botanically, a fruit is seed-bearing and develops from the ovary of a flowering plant, while vegetables are all other parts of the plant, such as roots, stems and leaves.

Legal Vegetables: Some edible plants are legally classified as vegetables for tariff, tax, and regulatory purposes. T

Earthnut Pea

Tubers. Earthnut peas (also known as groundnut peas or cowpeas) are a tuber of certain varieties of sweet peas. They have a nutty flavor and can be eaten boiled or roasted.

Seeds & pods. Edamame beans are whole, immature soybeans in green pods. They're usually served steamed or boiled with salt and are eaten by removing and eating the beans and discarding the pods. Try these edamame recipes.

Eddo

Roots & Tubers. Eddo (also called taro or dasheen) is a starchy root vegetable (colocasia esculenta) that grows in tropical and humid environments, such as the Pacific Islands and Hawaii. Eddo root has a fuzzy brown skin with distinctive rings, and pale white flesh speckled with purple.

Its starchy texture is similar to a potato, but it’s sweeter. It’s used in a wide variety of ways, including boiled, roasted, deep-fried, or steamed. But it's also used in sweet dishes, from ice cream to cakes!

Eddocan’t be eaten raw, and gloves should be worn before preparing it, as it can cause skin irritation when uncooked. Try this Eddo Recipe.

Elephant Foot Yam

Tubers. Elephant Foot Yam is also knowns as Ol, Oal, Chena, or Suran. It is a tropical tuber that is grown in Africa, South Asia, Southeast Asia, and the Pacific Islands.

Elephant Foot Yam is eaten fried, mashed, boiled, or baked, in curries and other dishes. Try it in Tariwale Suran.

Fruits. Eggplant is also known as aubergine. It has a glossy dark purple skin and elongated shape, with a spongy pale interior. Botanically a fruit or berry, eggplant is part of the nightshade family. Enjoy it in moussaka, roasted eggplant wedges, or cheesy baked eggplant.

Bulbs. Elephant garlic isn't technically garlic but is actually a stem leek. It produces large bulbs, that can be up to 4-inches wide! It has a milder flavor than regular garlic and can be used raw in salads, or cooked. Try them sliced and fried in butter.

Endive

Endive

Leaves. Also known as chicory, endive is a salad leaf with a pale white color and red or yellow tips. The mildly bitter leaves are crisp with a cup shape. Endive is a forced crop, meaning it is grown in complete darkness, which results in its pale color. It's usually served raw in a salad, but can also be grilled or broiled.

Enset

Leaves and tubers. Enset (also known as false banana, ensete, and Ethiopian banana) is a plant similar to the banana tree but is actually a herb. Enset can grow up to 20ft tall and is an important crop in Ethiopia.

The leaves are turned into a pulp to be fermented into flatbread, the hearts of the plant are eaten (like hearts of palm) and the corm tubers are cooked like potatoes.

A fermented starch from the enset plant is used to make Kocho, a traditional Ethiopian flatbread.

To make it, the green leaf of the plant is scraped with bamboo, then the pulp is placed into a pit lined with enset leaves. Yeast is mixed with the scrapings, then the pit is covered with rocks and more enset leaves. It is left to ferment in the ground for a month or even two years, as the flavor improves with age and take on a cheese-like aroma.

Bread is made by taking a little of the kocho out of the pit, chopping it finely, and then mixing it into a dough with butter and spices. It is then shaped into flatbreads and cooked - either on griddles or baked in a pit oven.

Escarole

Leaves. Escarole (also known as Bavarian endive, frisse, scarole, and broad-leaved endive) is a leafy green vegetable with curly, broad green leaves, and a slightly bitter flavor. It is in the chicory family along with frisée and endive. Escarole is popular in Italian cookery and can be served either cooked or raw in salads.
