What Are Vegetable Desserts?

My Story: How Veggie Desserts Began
Veggie Desserts started with a birthday cake.
When my son was about to turn one, I wanted to bake him a cake for his first birthday. But like many parents, I didn't want to make something loaded with sugar.
So I began experimenting with ways to make cakes naturally sweet and a little healthier.
After a few attempts, I created a low-sugar butternut squash cake topped with creamy avocado frosting. The vegetables added moisture, natural sweetness, and beautiful colour.
It was a hit.
That experiment sparked an idea: what if vegetables could be used more often in sweet recipes?
From there, Veggie Desserts was born, and I started sharing recipes that use vegetables in creative ways - from cakes and brownies to muffins, cookies, and even ice cream.
The idea grew into my cookbook:
